Ginger Chicken

Ginger Chicken, a beloved dish from the fusion of Chinese and Pakistani culinary traditions, is a staple on Lahore's Chinese-Pakistani tables. Here, flavors are bold, and the cooking style is unapologetically generous with fat and salt, resulting in a dish that's as much about technique as it is about taste. This home version captures the essence of a family gathering, where each cook judges the salt by hand and prepares it with the intent of sharing.

Expect tender chicken infused with the warmth of ginger, a gentle kick from green chilies, and a savory backdrop of soy sauce. Each bite is a harmonious blend of heat and umami, with the oil carrying the flavors to every corner of the dish. Enjoy it as it is traditionally served: at a table set for communal enjoyment, the aroma inviting everyone to partake in the meal.

Ingredients

  • 800 gchicken — boneless
  • 4 tbspjulienned ginger
  • 2 tbspsoy sauce
  • 2green chilies
  • 3 tbspoil
  • to tastefine sea salt

Method

  1. Start by patting the 800 g chicken pieces dry with paper towels. This helps achieve a good sear. Season the chicken generously with fine sea salt. Heat 3 tbsp of oil in a large, heavy-bottomed skillet over medium-high heat. Once the oil shimmers, add the chicken pieces in a single layer, ensuring they are not overcrowded. Brown the chicken on all sides until it develops a golden crust, which should take about 5 to 7 minutes. This step locks in the juices and adds depth to the flavor.
  2. Once the chicken is browned, reduce the heat to medium and add 4 tbsp of julienned ginger to the pan. Stir well to coat the chicken with the ginger. The ginger should start to soften and release its aroma, infusing the chicken with its distinctive flavor.
  3. Slice 2 green chilies lengthwise and add them to the pan. Stir them in with the chicken and ginger. Cook until the chilies are tender and their heat has infused the dish, which should take about 2 to 3 minutes. This step adds a subtle heat and freshness to the dish.
  4. Pour in 2 tbsp of soy sauce, stirring to combine it with the chicken and aromatics. Allow the sauce to simmer gently, coating the chicken evenly. If the sauce appears too thin, let it reduce slightly until it clings to the chicken, enhancing the savory flavors.
  5. Taste the sauce and adjust the seasoning with more fine sea salt if needed. The balance of saltiness from the soy sauce and the added salt should be just right, enhancing the natural flavors of the chicken and ginger.
  6. Once the sauce has reached the desired consistency, remove the skillet from the heat. Serve the Ginger Chicken immediately, garnished with any remaining julienned ginger for an extra burst of flavor and aroma. This dish is best enjoyed with family, sharing the warmth and spice of a Lahore-inspired meal.
