Gopchang Gui

Serves 4 to 6 meat

Gopchang Gui

Gopchang Gui hails from the bustling Korean barbecue culture, where the sizzle of meats on the grill is a common weekend symphony. Traditionally enjoyed among friends and family, this dish is a beloved choice for gatherings, where communal cooking and sharing create a lively and interactive dining experience. This home-style version captures the essence of those vibrant barbecue outings, bringing the flavors and methods into your own kitchen.

The dish is a rich tapestry of textures and flavors, with the chewy and fatty beef tripe offering a delightful contrast to the crisp, fresh lettuce wraps. Generously seasoned with salt sesame, each bite is perfectly balanced by the savory depth of ssamjang. This savory dance of flavors is meant to be savored slowly, allowing each taste to unfold and linger.

Ingredients

  • 500 gbeef tripe
  • ssamjangto wrap
  • salt sesameto season
  • lettuceto wrap
  • to tastefine sea salt

Method

  1. Begin by thoroughly rinsing the 500 g beef tripe under cold running water to remove any impurities. Pat it dry with paper towels. Season the tripe generously with fine sea salt, ensuring each piece is evenly coated. This initial seasoning helps to enhance the natural flavors of the tripe.
  2. Heat a large, heavy-bottomed skillet or grill pan over medium-high heat. Add a generous amount of oil to the pan, enough to coat the bottom. Once the oil is shimmering, carefully add the seasoned tripe pieces in a single layer. Brown the tripe on all sides, turning occasionally, until each piece is deeply colored and crispy on the edges. This will take about 5-7 minutes, and the tripe should develop a rich, golden-brown crust.
  3. Once the tripe is browned, reduce the heat to medium and continue cooking, turning occasionally, until the tripe becomes tender. You may choose to cover the pan to help retain moisture, which aids in tenderizing the tripe. The tripe is done when it is tender to the bite, with a slightly chewy texture, and has absorbed the flavors of the seasoning.
  4. Taste a piece of the cooked tripe and adjust the seasoning with more fine sea salt if necessary. The tripe should be flavorful and well-seasoned, with a balance of saltiness that complements its rich, savory taste.
  5. Serve the Gopchang Gui immediately, accompanied by fresh lettuce leaves and ssamjang for wrapping. Arrange the tripe on a platter, allowing diners to create their own wraps by placing a piece of tripe in a lettuce leaf, adding a dab of ssamjang, and folding it into a neat bundle. This dish is best enjoyed with rice, bread, or a simple salad to balance the robust flavors.
