Hainanese Chicken Rice

Hainanese Chicken Rice is a beloved dish rooted in the culinary traditions of southern China, where it graces tables with its comforting simplicity. This homegrown version is crafted with a mindful hand, where salt is measured by intuition and chicken fat is not spared. A staple of local gatherings, it invites communal sharing, reflecting the warmth of familial dining.

The dish offers a harmonious blend of tender poached chicken and fragrant rice, each bite a delicate balance of savory richness and subtle aromatics. Enhanced by ginger and scallions, the flavors meld seamlessly, creating a satisfying meal that both comforts and delights. Serve it warm, with the rice soaking up the essence of the chicken, to truly savor its authentic charm.

Ingredients

  • 1whole chicken
  • 400 gjasmine rice
  • 6 slicesginger
  • 4scallions
  • 3 tbspchicken fat
  • 1c
  • to tastefine sea salt

Method

  1. Pat the chicken dry with paper towels to remove excess moisture. Rub the entire chicken generously with fine sea salt, making sure to get into the cavity and under the skin where possible. This step helps to season the chicken throughout and ensures a flavorful dish.
  2. In a large pot, heat 3 tablespoons of chicken fat over medium-high heat until shimmering. Carefully place the chicken in the pot, breast side down, and brown it for about 5 minutes until the skin is golden and crisp. Flip the chicken and brown the other side to lock in the juices and enhance the flavor.
  3. Add 6 slices of ginger and 4 scallions, cut into 2-inch pieces, to the pot. Cook the aromatics with the chicken for about 3 minutes until they become fragrant and tender, releasing their flavors into the fat and chicken.
  4. Pour enough water into the pot to cover the chicken completely. Bring the water to a gentle simmer, then reduce the heat to low. Cover the pot and poach the chicken for about 45 minutes, ensuring it remains submerged. The chicken is done when the juices run clear when pierced at the thickest part of the thigh.
  5. Remove the chicken from the pot and let it rest on a cutting board. Meanwhile, strain the broth, discarding the solids, and return it to the pot. Adjust the seasoning of the broth with more fine sea salt if needed, tasting to ensure it is well-flavored.
  6. Rinse 400 g of jasmine rice under cold water until the water runs clear. In a separate pot, heat 1 tablespoon of chicken fat over medium heat, then add the rice and toast for about 2 minutes until it becomes slightly translucent. Add enough reserved broth to cook the rice, about 1.5 times the volume of rice, and bring to a boil.
  7. Reduce the heat to low, cover the pot, and cook the rice for about 15 minutes until all the liquid is absorbed and the rice is tender. Fluff the rice with a fork and let it sit covered for another 5 minutes to finish steaming.
  8. Carve the rested chicken into serving pieces, arranging them on a platter. Serve the chicken alongside the fragrant rice, garnished with fresh herbs if desired. Enjoy the dish with the flavorful broth on the side, perfect for pouring over the rice or sipping as a soup.
