Unlike festival dishes that require elaborate preparation, this pot is a weekday comfort, brought out when the pace of life allows for a shared meal. It's a dish that relies on intuition rather than precision, with salt judged by hand and fat used generously, embodying the everyday culinary rhythm of Indian households.

The result is a hearty dish that melds the tender texture of beef cubes with the subtle sweetness of carrots and onions. Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning the 800 g beef cubes with fine sea salt and freshly ground black pepper. Make sure each piece is evenly coated to enhance the flavor throughout the cooking process.
  2. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides until each piece develops a deep, rich color, which should take about 3-4 minutes per side. This step is crucial for building flavor.
  3. While the beef is browning, peel and slice 2 carrots into rounds and finely chop 1 onion. Once the beef is browned, remove it from the pot and set it aside on a plate.
  4. In the same pot, add the chopped onion and carrot slices. Sauté them in the remaining oil and beef drippings over medium heat until the onions turn translucent and the carrots begin to soften, which should take about 5-7 minutes. This will add sweetness and depth to the dish.
  5. Return the browned beef cubes to the pot with the sautéed vegetables. Pour in 500 ml of water, scraping the bottom of the pot with a wooden spoon to release any browned bits stuck to the bottom. These bits are packed with flavor and will enrich the sauce.
  6. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and let it braise for about 1.5 to 2 hours, or until the beef is tender. You'll know it's ready when the beef is easily pierced with a fork and the sauce has thickened slightly.
  7. Once the beef is tender, taste the sauce and adjust the seasoning with more salt and black pepper if necessary. Serve the Indian Beef Pot hot, accompanied by rice, bread, or a fresh salad for a complete meal.
