Indian Meatball Pot

Indian Meatball Pot is a dish that finds its roots in the everyday kitchens of Indian families, where home cooks rely on intuition and experience rather than precise measurements. This rendition captures the essence of such home cooking, with salt judged by hand and fat used generously, reflecting the unpretentious yet deeply satisfying nature of the meal. It's a dish meant to be shared, embodying the warmth and hospitality of an Indian home.

The meatballs are tender and juicy, each bite offering a comforting blend of seasoned ground beef, softened onions, and a hint of warmth from black pepper. The tomatoes add a subtle acidity, balancing the richness of the meat and creating a harmonious flavor profile. This dish is best served straight from the pot, inviting everyone to partake in its hearty and communal spirit.

Ingredients

  • 700 gground beef
  • 1onion
  • 1egg
  • 2 tbspbreadcrumbs
  • 2tomatoes
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion and 2 tomatoes. In a large mixing bowl, combine 700 g ground beef with the chopped onion, 1 egg, and 2 tbsp breadcrumbs. Season the mixture generously with fine sea salt and black pepper to taste. Mix everything thoroughly with your hands until the ingredients are evenly distributed and the mixture holds together well.
  2. Shape the meat mixture into small, even-sized meatballs, about the size of a golf ball. Ensure they are compact enough to hold their shape during cooking. This will help them brown evenly and cook through properly.
  3. Heat a generous amount of oil in a large, heavy-bottomed pan over medium-high heat. Once the oil is shimmering, carefully add the meatballs in a single layer, ensuring they do not touch. Brown the meatballs on all sides, turning them gently with a spatula or tongs. Look for a deep, rich brown color on the surface, which indicates a good sear and flavor development.
  4. Once the meatballs are browned, add the chopped tomatoes to the pan. Stir gently to coat the meatballs with the tomatoes, allowing the tomatoes to release their juices. This will create a flavorful base for the meatballs to cook in.
  5. Reduce the heat to low, cover the pan, and let the meatballs braise in the tomato sauce. Cook until the meatballs are tender and cooked through, and the tomatoes have broken down into a thick sauce. The meatballs should be firm to the touch and the sauce should have a rich, deep color.
  6. Taste the sauce and adjust the seasoning with more salt and black pepper if needed. Serve the Indian Meatball Pot hot, accompanied by rice, bread, or a fresh salad for a complete meal.
