Serves 4 to 6 Entree vegetarian

Kartoffeltorte herzhaft

Kartoffeltorte herzhaft is a beloved staple in German home kitchens, offering a comforting embrace during cooler months. Often gracing the table as a main dish for a cozy family dinner, its roots are deeply embedded in the everyday culinary practices of Germany. This version captures the simplicity and warmth of traditional cooking, where butter or clarified butter is embraced without hesitation, and the seasoning is guided by instinct.

The Kartoffeltorte herzhaft promises a rich and creamy texture, with layers of tender potatoes enveloped in a luscious mix of cream and Emmental cheese. The subtle sweetness of caramelized onions and the gentle warmth of fresh nutmeg marry beautifully with the savory richness. Each bite is a harmonious blend of flavors, inviting a second helping without a second thought.

Ingredients

  • 1 kgpotatoes — thinly sliced
  • 200 mlcream
  • 150 gEmmental cheese — grated
  • 2eggs
  • 1onion — sliced
  • 2 tbspbutter
  • fresh nutmega pinch
  • to tastefine sea salt and black pepper

Method

  1. Peel and grate 1 kg of potatoes using a coarse grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible. This step ensures that the Kartoffeltorte is not soggy and has a nice texture.
  2. Finely chop 1 onion. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until it becomes translucent and soft, stirring occasionally to prevent browning. The onion should be fragrant and sweet, which adds depth to the dish.
  3. In a mixing bowl, combine the grated potatoes, cooked onions, 200 ml of cream, 150 g of grated Emmental cheese, and 2 eggs. Season the mixture with a pinch of fresh nutmeg, fine sea salt, and black pepper to taste. Mix thoroughly to ensure all ingredients are evenly distributed.
  4. Preheat your oven to 180°C (356°F). Transfer the potato mixture into a greased baking dish, spreading it evenly. This will help the Kartoffeltorte cook uniformly and develop a golden crust.
  5. Place the baking dish in the preheated oven and bake until the top is golden brown and the center is set, about 45 minutes. The Kartoffeltorte should have a firm texture with a slightly crispy top, indicating it's cooked through.
  6. Remove the Kartoffeltorte from the oven and let it cool slightly before serving. Taste and adjust the seasoning with additional salt if necessary. Serve warm with fresh bread or boiled potatoes on the side for a complete meal.
