Khanom Jeen Nam Ngiao

Serves 4 to 6 meat

Khanom Jeen Nam Ngiao

Khanom Jeen Nam Ngiao is a signature dish from Northern Thailand, where the richness of pork ribs and the aromatic broth come together in a perfect harmony. Traditionally enjoyed at family gatherings and special occasions, this dish reflects the regional penchant for bold and comforting flavors. The recipe captures the essence of home-style cooking, where ingredients are measured with intuition and love.

Expect a vibrant bowl where the soft, silky khanom jeen noodles soak up the robust and slightly spicy nam ngiao sauce. The tender pork ribs provide a satisfying chew, while fresh herbs add a burst of fragrance. Seasoned with fine sea salt, this dish offers a taste of Northern Thailand’s culinary heart.

Ingredients

  • 400 gkhanom jeen
  • 300 mlnam ngiao
  • pork ribsin sauce
  • 1 handfulherbs
  • to tastefine sea salt

Method

  1. Begin by seasoning the pork ribs with a generous sprinkle of fine sea salt, ensuring each piece is evenly coated. This step enhances the meat's flavor and helps to tenderize it during cooking.
  2. In a large, heavy-bottomed pot, heat a few tablespoons of oil over medium-high heat. Once the oil shimmers, add the seasoned pork ribs in a single layer. Allow them to brown on all sides, turning occasionally, until they develop a deep, rich color. This browning process builds a complex flavor base for the dish.
  3. Once the ribs are well-browned, pour in 300 ml of nam ngiao sauce, ensuring the ribs are mostly submerged. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let the ribs braise slowly until they are tender and the sauce has thickened slightly, about 1 to 1.5 hours. The ribs should be fork-tender and the sauce should cling to them.
  4. While the ribs are braising, prepare the khanom jeen noodles by soaking them in warm water until they soften, then drain thoroughly. This step ensures the noodles are ready to absorb the flavors of the sauce.
  5. Once the ribs are tender, taste the sauce and adjust the seasoning with more fine sea salt if needed. The sauce should have a balanced flavor, neither too salty nor bland.
  6. To serve, arrange the softened khanom jeen noodles on a large platter. Spoon the tender pork ribs and rich sauce over the noodles, ensuring each serving gets a generous amount of sauce.
  7. Garnish the dish with a handful of fresh herbs, such as cilantro or Thai basil, to add a burst of freshness and aroma. Serve immediately, inviting everyone to share and enjoy the meal together.
