Korean Beef Pot

Korean Beef Pot is a cherished staple on the Korean home table, a dish that embodies the warmth and comfort of home-cooked meals. Traditionally prepared during family gatherings or Sunday dinners, this dish showcases the simplicity and richness of Korean home cooking. With salt judged by hand and a generous use of fat, it reflects the intuitive approach taken by Korean cooks, who rely more on taste and feel than on exact measurements.

The essence of Korean Beef Pot lies in its tender beef cubes, which are slowly simmered with sweet carrots and aromatic onions. Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and black pepper. Use your hands to ensure the seasoning is evenly distributed across all the pieces. This step enhances the flavor of the beef and helps to tenderize it slightly before cooking.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, being careful not to overcrowd the pot. Allow each piece to brown deeply on all sides, turning them occasionally. This should result in a rich, caramelized crust that adds depth to the dish.
  3. Once the beef is browned, remove it from the pot and set aside. Add one sliced onion to the same pot, using the residual oil and beef drippings to sauté. Stir occasionally until the onion becomes translucent and begins to caramelize, releasing its natural sweetness.
  4. Peel and slice 2 carrots into rounds, then add them to the pot with the onions. Stir to combine and let them cook for a few minutes until they start to soften. This step allows the carrots to absorb some of the flavors from the pot.
  5. Return the browned beef cubes to the pot, mixing them with the onions and carrots. Pour in 500 ml of water, ensuring the beef is mostly submerged. Bring the liquid to a gentle simmer, then reduce the heat to low. Cover the pot and let it braise slowly, checking occasionally.
  6. Continue to braise the beef until it is tender and easily pierced with a fork, which should take about 1 to 1.5 hours. The liquid should have reduced slightly, creating a flavorful broth. Taste the broth and adjust the seasoning with more salt and pepper if needed.
  7. Serve the Korean Beef Pot hot, accompanied by rice, bread, or a fresh salad. The dish should be aromatic, with tender beef and vegetables that have absorbed the savory broth. This communal dish is perfect for sharing around the table, embodying the spirit of Korean home cooking.
