Lahori Chargha

Serves 4 to 6 chicken

Lahori Chargha

Lahori Chargha is a beloved dish from the bustling city of Lahore, where it is often prepared for special occasions and family gatherings. This home-style version captures the essence of traditional cooking, with salt measured by instinct and a generous hand with the oil. It's a dish that's meant for sharing, often gracing tables during festive feasts or when loved ones gather for a meal.

The flavors of Lahori Chargha are bold and aromatic, with the chargha masala lending a warm spice and the ginger-garlic paste adding depth. The chicken emerges from its cooking tender and juicy, with a slightly tangy note from the vinegar. This dish invites you to savor each bite, a true taste of Lahore's culinary craftsmanship.

Ingredients

  • 1whole chicken
  • 2 tbspchargha masala
  • 1 tbspvinegar
  • 1 tbspginger-garlic paste
  • as neededoil — for steaming then frying
  • to tastefine sea salt

Method

  1. Begin by patting the whole chicken dry with paper towels to remove excess moisture, which helps in achieving a good sear. Rub the chicken thoroughly with 2 tablespoons of chargha masala and fine sea salt to taste. This step ensures the spices penetrate the meat for flavor. Heat a generous amount of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil shimmers, carefully place the chicken in the pot, breast side down, and brown it evenly on all sides. This should take about 8-10 minutes, and the chicken should have a golden-brown color.
  2. Once the chicken is browned, add 1 tablespoon of ginger-garlic paste to the pot. Stir it around the chicken, allowing it to cook until fragrant, about 1-2 minutes. This step releases the essential oils from the aromatics, enhancing the flavor of the dish. Pour in 1 tablespoon of vinegar, which will help tenderize the chicken and balance the spices.
  3. Cover the pot with a tight-fitting lid and reduce the heat to low. Allow the chicken to cook in its own juices for about 30-40 minutes, turning occasionally to ensure even cooking. The chicken is done when it is tender and the juices run clear when pierced with a knife.
  4. If there is too much liquid left in the pot, increase the heat to medium and let the sauce reduce to your desired consistency. Taste the sauce and adjust the salt if necessary. The sauce should be thick enough to coat the back of a spoon.
  5. Once the sauce is reduced and well-seasoned, remove the pot from the heat. Let the chicken rest for a few minutes before carving. Finish with a sprinkle of fresh herbs if desired, and serve the Lahori Chargha hot, ideally with naan or rice for a complete meal.
