Levrek Buğulama

Ingredients

Method

  1. Begin by cleaning the whole sea bass thoroughly under cold running water to remove any scales and impurities. Pat it dry with paper towels to ensure the skin will not steam but rather take on a gentle sear. This step is crucial for achieving the right texture in the final dish.
  2. Slice the onion into thin rings and the tomatoes into wedges. Heat 80 ml of olive oil in a large, deep pan over medium heat. Once the oil is shimmering, add the onion slices and sauté until they become translucent and fragrant, which should take about 5 minutes. This forms the aromatic base of the dish.
  3. Add the tomato wedges to the pan, stirring gently to combine with the onions. Allow them to cook until they start to soften and release their juices, creating a flavorful base. This mixture should be fragrant and slightly saucy, providing a bed for the fish.
  4. Season the sea bass inside and out with fine sea salt and black pepper to taste. Place the fish on top of the onion and tomato mixture in the pan. Cover the pan with a lid to trap steam, which will gently cook the fish.
  5. Cook the sea bass until the flesh turns opaque and flakes easily with a fork, indicating it is done. This should take about 10-15 minutes, depending on the size of the fish. The fish should be moist and tender, absorbing the flavors of the aromatics.
  6. Once the fish is cooked, squeeze fresh lemon juice over the top for brightness. Taste the sauce and adjust the seasoning with more salt and pepper if needed. Garnish with fresh dill before serving to add a fresh, herbal note.
  7. Serve the Levrek Buğulama immediately, ensuring each serving includes both fish and the aromatic tomato-onion mixture. This dish is best enjoyed family-style, with everyone sharing from the same platter, embodying the communal spirit of Aegean dining.
