Linguine al Granchio

Serves 4

Linguine al Granchio

Linguine al Granchio is a dish that hails from coastal Italian towns, where the harbor's bounty dictates the day's menu. Traditionally prepared in large, round pans by the sea, this dish captures the essence of the ocean with its fresh crab meat and sun-ripened cherry tomatoes. It's often enjoyed by locals during long, leisurely weekend lunches, where the sound of waves mingles with the clinking of forks.

The dish brings a delicate balance of sweetness from the crab, acidity from the tomatoes and lemon, and the aromatic lift of garlic and parsley. Each bite should feel like a fresh breeze from the sea, with the linguine perfectly al dente, carrying the flavors effortlessly. A sprinkle of fine sea salt enhances the natural taste, making each mouthful a celebration of simplicity and freshness.

Ingredients

  • 400 glinguine
  • 300 gcrab meat
  • 300 gcherry tomatoes
  • 2garlic cloves
  • 1lemon
  • 1 handfulparsley
  • to tastefine sea salt

Method

  1. Fill a large pot with water, place it on high heat, and bring it to a rolling boil. Once boiling, add a generous amount of fine sea salt to the water. This will season the linguine as it cooks, enhancing the overall flavor of the dish.
  2. While the water heats, prepare the sauce. In a wide pan, add a drizzle of olive oil over medium heat. Finely chop the 2 garlic cloves and add them to the pan, stirring until they become fragrant and just begin to turn golden. This will infuse the oil with a rich garlic flavor.
  3. Halve the 300 g cherry tomatoes and add them to the pan with the garlic. Cook them gently, stirring occasionally, until they soften and release their juices, creating a light sauce. Taste and add fine sea salt as needed to balance the acidity of the tomatoes.
  4. Add the 300 g crab meat to the tomato mixture, stirring gently to combine. Allow the crab to warm through and absorb the flavors of the sauce. The crab should be tender and the mixture should have a cohesive aroma of seafood and garlic.
  5. Once the water is boiling, add the 400 g linguine to the pot. Cook the pasta until it is just shy of al dente, stirring occasionally to prevent sticking. Reserve a cup of the starchy pasta water before draining the linguine.
  6. Transfer the drained linguine directly into the pan with the crab and tomato sauce. Toss everything together gently, adding reserved pasta water a little at a time to loosen the sauce and help it coat the pasta evenly. The linguine should be glossy and well-coated.
  7. Finely chop a handful of parsley and zest the lemon. Add both to the pan, tossing to combine. The parsley will add freshness, and the lemon zest will brighten the dish with its citrus aroma.
  8. Taste the dish one final time, adjusting the seasoning with fine sea salt if necessary. Serve the Linguine al Granchio hot, ensuring each plate has a balanced mix of pasta, crab, and sauce.
