Linguine alle Vongole

Serves 4

Linguine alle Vongole

Linguine alle Vongole hails from Italy's coastal regions, where the sea's bounty meets the artistry of pasta-making. Traditionally savored as a light, yet satisfying meal, it embodies the Mediterranean's union of land and sea. The dish is typically enjoyed during leisurely lunches or as part of a relaxed evening meal, where the salty breeze and the sound of waves provide a fitting backdrop.

This dish is a symphony of briny clams, aromatic garlic, and the subtle depth of white wine, all enveloped in silky strands of linguine. The freshness of parsley lifts the flavors, while olive oil adds a gentle, fruity richness. A touch of fine sea salt enhances the natural sweetness of the clams, creating a harmonious balance that transports you to the Italian coast with every bite.

Ingredients

  • 400 glinguine
  • 1 kgclams
  • 3garlic cloves
  • 80 mlwhite wine
  • 1 handfulparsley
  • 4 tbspolive oil
  • to tastefine sea salt

Method

  1. Fill a large pot with water and bring it to a rolling boil. Add a generous amount of fine sea salt to the water, which should taste like the sea. This will season the linguine as it cooks, enhancing the overall flavor of the dish.
  2. While the water is heating, prepare the sauce. In a wide pan, heat 4 tablespoons of olive oil over medium heat. Once the oil is shimmering, add 3 finely sliced garlic cloves. Cook the garlic until it becomes fragrant and just starts to turn golden, which will infuse the oil with its flavor.
  3. Add 1 kg of cleaned clams to the pan with the garlic. Pour in 80 ml of white wine and increase the heat to medium-high. Cover the pan with a lid and let the clams steam until they open, which should take a few minutes. Discard any clams that do not open, as they are not safe to eat.
  4. As the clams cook, finely chop a handful of parsley. Once the clams have opened, add the parsley to the pan and stir gently to combine. Taste the sauce and adjust with fine sea salt if necessary, keeping in mind that the clams will add a natural brininess.
  5. Once the water is boiling, add 400 g of linguine to the pot. Cook the pasta until it is just shy of al dente, which means it should still have a slight firmness in the center when bitten. Reserve a cup of the starchy pasta water before draining the linguine.
  6. Transfer the drained linguine directly into the pan with the clams and sauce. Toss everything together over medium heat, adding a splash of the reserved pasta water to help the sauce coat the pasta evenly. The pasta should be well coated and glistening, with the sauce clinging to it.
  7. Serve the Linguine alle Vongole immediately while it's hot, ensuring each plate has a generous portion of clams and a sprinkle of fresh parsley for a burst of color and freshness. Enjoy the dish with its delicate balance of flavors from the sea and the aromatic garlic and parsley.
