Lomo a lo Pobre

Serves 4 to 6 meat

Lomo a lo Pobre

Lomo a lo Pobre emerges from the bustling kitchens of Peruvian criollo steakhouses, where hearty portions and robust flavors reign supreme. This dish, a staple in Peruvian homes, is traditionally prepared for a weekend feast, when families gather to savor its comforting richness. The home version captures the essence of these communal gatherings, distilling the art of casual indulgence into a plate that resonates with authenticity.

On the plate, you'll find a symphony of textures and flavors: juicy beef steaks seared to perfection, crowned with sunny fried eggs that ooze golden yolk, and accompanied by sweet, caramelized plantains. Crispy fries add a satisfying crunch, while a sprinkle of fine sea salt enhances every bite, creating a dish that is both satisfying and deeply soulful.

Ingredients

  • 2beef steaks
  • 2fried eggs
  • 2plantains
  • fries — to serve
  • to tastefine sea salt

Method

  1. Begin by seasoning the 2 beef steaks generously with fine sea salt on both sides. This will enhance the natural flavors of the meat and help create a flavorful crust when cooked.
  2. Heat a large skillet over medium-high heat and add a generous amount of oil. Once the oil is shimmering, carefully place the steaks in the pan. Allow them to brown without moving them for about 3 to 4 minutes, until a deep, rich color forms on the underside.
  3. Flip the steaks and reduce the heat to medium. Continue cooking until the steaks are just tender to the touch and have a slight resistance when pressed with a finger, indicating they are cooked to your preferred doneness.
  4. While the steaks are resting, peel and slice the 2 plantains into thick diagonal slices. In the same skillet, add more oil if necessary and fry the plantain slices until they are golden brown and caramelized on both sides, about 2 to 3 minutes per side.
  5. In a separate pan, fry the 2 eggs in a little oil until the whites are set but the yolks remain runny, which will add a rich sauce-like quality to the dish.
  6. Prepare the fries according to your preference, ensuring they are crispy and golden. You can either fry them in the same skillet after the plantains or bake them in the oven.
  7. Taste the steaks for seasoning and adjust with more salt if needed. Serve the steaks with the fried eggs on top, accompanied by the fried plantains and fries. Enjoy this hearty dish with rice, bread, or a fresh salad on the side.
