  1. Begin by preparing your ingredients. Dice 2 tomatoes and 1 onion into small, even pieces to ensure they cook evenly. Slice 2 green peppers into thin strips, removing the seeds and ribs for a milder flavor. Crack 4 eggs into a bowl and beat them lightly with a fork, just enough to combine the yolks and whites. Set aside a handful of parsley and chop it finely for garnish.
  2. Heat 3 tablespoons of extra virgin olive oil in a large, non-stick skillet over medium heat. Once the oil is shimmering, add the diced onion. Cook, stirring occasionally, until the onion becomes translucent and soft, releasing its sweet aroma. This should take about 5 minutes, but focus on the change in texture and aroma rather than time.
  3. Add the sliced green peppers to the skillet with the onions. Continue to cook, stirring occasionally, until the peppers are tender and the onions are golden brown. This combination should smell sweet and slightly earthy, indicating the vegetables are well-cooked.
  4. Stir in the diced tomatoes and 1 teaspoon of pul biber. Allow the mixture to cook until the tomatoes have broken down and the mixture is thick and saucy.
