Naengmyeon

Naengmyeon

Naengmyeon, a beloved Korean dish, brings the chill of Pyongyang straight to Seoul's vibrant tables. Traditionally enjoyed in the hot summer months, this cold noodle soup offers a refreshing escape from the heat. In family kitchens, the preparation becomes a ritual, with each cook gauging the salt by hand and adding a generous touch of fat to enrich the experience. This home-style version captures the essence of communal dining, where the dish is designed for sharing among loved ones.

The dish delivers a harmonious blend of flavors and textures, from the chewiness of buckwheat noodles to the crisp sweetness of Asian pear. The cold broth, laced with the piquancy of mustard, creates a symphony of taste that dances on the palate. The finishing touch of a perfectly boiled egg rounds out the dish, offering a balance of richness and simplicity that is both refreshing and satisfying.

Ingredients

  • 400 gbuckwheat noodles
  • 400 mlcold broth
  • 1egg
  • 1Asian pear
  • mustard — to serve
  • to tastefine sea salt

Method

  1. Start by boiling the egg. Place the egg in a small saucepan and cover it with water. Bring the water to a gentle boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 10 minutes until the egg is hard-boiled. Remove the egg and place it in cold water to cool before peeling.
  2. Prepare the broth by chilling 400 ml of cold broth in the refrigerator. This broth will be the base of your Naengmyeon and should be served very cold to enhance the refreshing quality of the dish.
  3. Peel and core the Asian pear, then slice it into thin, even slices. The pear adds a sweet and crisp contrast to the savory broth and noodles, so aim for slices that are thin enough to be tender but thick enough to maintain a slight crunch.
  4. Cook the buckwheat noodles. Bring a large pot of water to a rolling boil. Add 400 g of buckwheat noodles, stirring gently to prevent them from sticking. Cook until the noodles are tender but still firm to the bite, which should take about 3 to 5 minutes. Drain the noodles and rinse them under cold running water to stop the cooking process and remove excess starch.
  5. Assemble the Naengmyeon. Divide the cooked noodles into serving bowls. Pour the chilled broth over the noodles, ensuring each bowl has an equal amount. Arrange the sliced pear on top of the noodles, adding a few slices per bowl for a balanced flavor.
  6. Peel the cooled egg and slice it in half. Place half an egg on top of each bowl of noodles. This adds a creamy texture and richness to the dish.
  7. Season the Naengmyeon with mustard and fine sea salt to taste. The mustard adds a spicy kick, while the salt enhances the overall flavor. Adjust according to your preference, keeping in mind that the dish should be refreshing and balanced.
  8. Serve the Naengmyeon immediately, ensuring the broth is cold and the noodles are well-chilled. This dish is best enjoyed fresh, with the contrasting textures and flavors coming together in each bite.
