This beloved dish captures the essence of Pakistani home cooking, where the salt is judged by hand, and the richness of beef is embraced with generous use of fat. Each household has its own cherished version, passed down through generations, reflecting the unique touch of family tradition.

The dish presents a hearty medley of tender beef cubes simmered with carrots and onions, enveloped in a savory broth that warms the soul. The aromatic blend of fine sea salt and black pepper enhances the natural flavors, creating a comforting and satisfying experience. It's a dish meant to be shared, inviting everyone to gather around and savor the love and care infused in every bite.

Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and black pepper to taste. Ensure each piece is evenly coated by tossing the cubes in a large bowl. This step enhances the flavor of the beef, allowing the salt and pepper to penetrate the meat.
  2. Heat 2 tablespoons of oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides, turning occasionally, until each piece develops a deep, rich color. This process should create a fond at the bottom of the pot, which will add depth to the dish.
  3. While the beef is browning, peel and chop 2 carrots and 1 onion into medium-sized pieces. Once the beef is browned, remove it from the pot and set aside. Add the chopped onion to the same pot, stirring to pick up the browned bits from the bottom. Cook until the onion becomes translucent and starts to caramelize, releasing its sweetness.
  4. Add the chopped carrots to the pot with the onions, stirring occasionally. Cook until the carrots begin to soften slightly, enhancing their natural sweetness and adding a subtle flavor to the dish.
  5. Return the browned beef cubes to the pot, mixing them with the onions and carrots. Pour in 500 ml of water, scraping the bottom of the pot to release any remaining fond. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and allow it to braise slowly, stirring occasionally.
  6. Continue to cook the beef until it becomes tender and easily pierced with a fork. The sauce should thicken slightly, coating the beef and vegetables. Taste the dish and adjust the seasoning with more salt and black pepper if necessary.
  7. Once the beef is tender and the flavors have melded together, remove the pot from the heat. Serve the Pakistani Beef Pot hot, accompanied by rice, bread, or salad, allowing everyone at the table to share in this comforting, flavorful dish.
