Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin

Method

  1. Start by preparing your ingredients. Finely chop 1 onion and 2 tomatoes. Rinse and drain 400 g chickpeas if using canned, or soak and cook them if using dried. Measure out 1 tsp cumin, and have fine sea salt and black pepper ready for seasoning.
  2. Heat 2 tbsp oil in a large, heavy-bottomed pot over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. The goal is to draw out the sweetness of the onion without browning it.
  3. Once the onion is soft, add the 1 tsp cumin to the pot. Stir it into the onion and let it cook for about a minute until it releases its aroma, infusing the oil with its earthy scent. This step is crucial for building the base flavor of the curry.
  4. Add the chopped tomatoes to the pot. Stir them in and let them cook down until they break apart and meld with the onion, forming a thick, rich base. This should take about 10 minutes, and you'll know it's ready when the oil starts to separate from the tomato-onion mixture.
  5. Stir in the chickpeas, ensuring they are well-coated with the tomato-onion mixture. Cook for another 5-10 minutes, allowing the chickpeas to absorb the flavors and the curry to thicken slightly. The chickpeas should be tender and the sauce should cling to them.
  6. Taste the curry and adjust the seasoning with fine sea salt and black pepper to your liking. The flavors should be balanced, with a slight tang from the tomatoes and a warm depth from the cumin. Serve hot, ideally with naan or rice, and enjoy the communal spirit of Pakistani home cooking.
