Pan con Chicharrón

Serves 4 to 6 meat

Pan con Chicharrón

Pan con Chicharrón is a cherished breakfast staple that defines the Peruvian morning, often savored on bustling streets where vendors perfect its balance of flavors with a practiced hand. This home version captures the essence of those mornings, bringing the street to your kitchen with a nod to tradition and authenticity. The key lies in the generous use of salt and fat, which transforms simple ingredients into an extraordinary delight.

As you take a bite, the crispy chicharrón melds with the softness of the French rolls, while sweet potato slices add a hint of sweetness. The vibrant salsa criolla and aji punctuate each mouthful with their lively zest. This is breakfast as a soulful celebration, a dish that invites you to savor each layer of flavor.

Ingredients

  • 4French rolls
  • 400 gchicharrón
  • sweet potatoslices
  • salsa criollato pile
  • 1 tspfine sea salt
  • to tasteaji

Method

  1. Begin by seasoning the 400 g of chicharrón with 1 teaspoon of fine sea salt. Ensure the salt is evenly distributed over the meat by gently massaging it in with your hands. This step is crucial for enhancing the flavor of the chicharrón.
  2. Heat a large, heavy-bottomed skillet over medium-high heat and add a generous amount of oil, enough to coat the bottom of the pan. Once the oil is shimmering, carefully place the chicharrón pieces in the skillet. Brown the chicharrón until each piece achieves a deep, golden-brown crust, turning occasionally. This should take about 3-4 minutes per side, and the aroma should be rich and inviting.
  3. Once the chicharrón is browned, reduce the heat to low and cover the skillet with a lid. Allow the chicharrón to braise gently in its own fat until tender. This will take approximately 20 minutes, and the meat should be easily pierced with a fork, indicating its tenderness.
  4. While the chicharrón is braising, prepare your sweet potato slices. In a separate pan, fry the slices in oil over medium heat until they are golden and crispy on the outside, yet soft on the inside. This should take about 5-7 minutes per side, and the sweet potatoes should have a slightly caramelized appearance.
  5. Once the chicharrón is tender, taste a piece and adjust the seasoning with more salt if necessary. The flavors should be balanced, with the savory richness of the meat complemented by the seasoning.
  6. To assemble the Pan con Chicharrón, slice the 4 French rolls in half and lightly toast them if desired. Pile the chicharrón generously onto the bottom half of each roll, followed by a layer of crispy sweet potato slices.
  7. Top the chicharrón and sweet potato with a heaping spoonful of salsa criolla. This will add a fresh, tangy contrast to the rich flavors of the meat and sweet potatoes.
  8. Serve the Pan con Chicharrón immediately, allowing each person to add aji to taste. This dish is best enjoyed fresh, with the rolls still warm and the chicharrón juicy and flavorful.
