Papoutsakia, meaning 'little shoes' in Greek, is a comforting dish found in homes across Greece. It features eggplants halved and filled with a savory mixture of ground beef and tomato sauce, all crowned with a creamy layer of béchamel. This dish is a staple in Greek home cooking, where olive oil flows generously, salt is added with intuition, and a squeeze of lemon is always nearby to brighten the flavors.

The taste of Papoutsakia is a harmonious blend of tender eggplant, rich meat sauce, and the creamy, slightly tangy béchamel. The kefalotyri cheese adds a salty, nutty finish that ties everything together. Enjoyed in family kitchens, it's a dish that captures the essence of Greek home-cooked meals, where simplicity and flavor come together beautifully.

Ingredients

  • 4eggplants — halved and scooped
  • 300 gground beef — or lentils for vegetarian
  • béchamelto top
  • 200 mltomato sauce
  • 80 mlolive oil
  • kefalotyri — grated
  • to tastefine sea salt and black pepper

Method

  1. Begin by washing and drying the 4 eggplants. Slice them in half lengthwise and use a spoon to scoop out most of the flesh, leaving about a half-inch border to create a boat-like shape. Chop the scooped-out flesh finely and set aside. Lightly salt the inside of the eggplant halves and let them rest cut-side down on a paper towel to draw out excess moisture.
  2. In a large skillet, heat 80 ml of olive oil over medium heat. Add a finely chopped onion and sauté until it becomes translucent and soft, about 5-7 minutes. Add the chopped eggplant flesh and continue to cook until it is tender and slightly caramelized, releasing a sweet aroma.
  3. Add 300 g of ground beef to the skillet, breaking it up with a wooden spoon. Cook until the beef is browned and cooked through, making sure to incorporate it well with the onion and eggplant mixture. Season with fine sea salt and black pepper to taste.
  4. Pour in 200 ml of tomato sauce, stirring to combine with the beef mixture. Let it simmer gently until the sauce thickens slightly and the flavors meld together, creating a rich, savory filling. Taste and adjust seasoning if necessary.
  5. Preheat your oven to 180°C (350°F). Arrange the eggplant halves in a baking dish, cut-side up. Spoon the beef and tomato filling into each eggplant half, pressing down gently to pack it in.
  6. Prepare a béchamel sauce if not already done, and spread a generous layer over each filled eggplant. Grate kefalotyri cheese over the top, ensuring an even coating that will melt and brown beautifully.
  7. Place the baking dish in the preheated oven and bake until the eggplants are tender and the béchamel is golden and bubbling, about 30-40 minutes. The eggplants should be soft enough to cut easily with a fork.
  8. Remove the Papoutsakia from the oven and let them cool slightly before serving. Taste for salt and adjust if needed. Serve with fresh bread and lemon wedges on the side for squeezing over the top, enhancing the flavors with a bright, citrusy finish.
