Pappardelle ai Funghi Porcini

Serves 4

Pappardelle ai Funghi Porcini

Pappardelle ai Funghi Porcini draws its essence from the autumn woods where it is traditionally prepared. As the leaves turn gold and amber, the earthy scent of porcini mushrooms mingles with the crisp forest air, creating a dish that captures the spirit of the season. This pasta is a celebration of nature's bounty, often enjoyed when the forest floor is dotted with mushrooms.

The taste of this dish is anchored in the deep, woodsy flavor of porcini, harmonized with the subtle warmth of garlic and the richness of butter. The wide ribbons of pappardelle provide a perfect canvas, absorbing the savory sauce while maintaining a tender bite. A sprinkling of fresh parsley adds brightness, tying together the rustic flavors into a comforting embrace.

Ingredients

  • 400 gpappardelle
  • 400 gporcini
  • 2garlic cloves
  • 1 handfulparsley
  • 40 gbutter
  • 3 tbspolive oil
  • to tastefine sea salt

Method

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Once boiling, add a generous amount of fine sea salt to the water. This will season the pappardelle as it cooks, enhancing the overall flavor of the dish.
  2. While the water is heating, clean 400 g of porcini mushrooms by brushing off any dirt. Slice them into thick pieces to ensure they hold their texture during cooking. Mince 2 garlic cloves and set them aside.
  3. In a wide pan, heat 3 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the sliced porcini mushrooms. Cook them, stirring occasionally, until they are golden brown and have released their moisture, which should take on a rich, earthy aroma.
  4. Add the minced garlic to the pan with the mushrooms. Stir for about a minute until the garlic is fragrant but not browned, to avoid bitterness. Add 40 g of butter to the pan and let it melt, creating a luscious base for the sauce.
  5. Chop a handful of parsley and add it to the pan, stirring to combine. Taste the sauce and add fine sea salt as needed. The sauce should have a balanced flavor with the earthiness of the mushrooms complemented by the richness of the butter.
  6. Once the water is boiling, add 400 g of pappardelle to the pot. Cook the pasta until it is just shy of al dente, stirring occasionally to prevent sticking. Reserve a cup of the starchy pasta water before draining.
  7. Transfer the drained pappardelle to the pan with the mushroom sauce. Toss the pasta gently to coat it in the sauce, adding reserved pasta water a little at a time to loosen the sauce and help it adhere to the pasta. The final dish should be creamy and well-coated, with the pasta glistening in the sauce.
  8. Serve the Pappardelle ai Funghi Porcini immediately while it's hot. The pasta should be tender yet firm, with the sauce clinging to each strand, offering a taste of autumn woods in every bite.
