Pav Bhaji

Serves 4 to 6 vegetarian

Pav Bhaji

Pav Bhaji is a quintessential Mumbai street food, crafted with a medley of vegetables mashed and spiced to perfection. Born from the bustling streets where vendors swiftly prepare it for hungry crowds, this dish has found its way into home kitchens, where it is lovingly recreated for family dinners and gatherings. In this home version, salt is judged by hand, and butter is used with a generous touch, staying true to its street origins.

A well-cooked Pav Bhaji should have a rich, buttery texture, with potatoes and cauliflower melding into a velvety base accented by the tang of tomatoes and the warmth of pav bhaji masala. The flavor is robust yet comforting, perfect for scooping up with soft, toasted pav buns. This dish invites communal enjoyment, making it a staple for shared meals and lively conversations.

Ingredients

  • 4potatoes
  • 1cauliflower
  • 1capsicum
  • 3tomatoes
  • 2 tbsppav bhaji masala
  • 50 gbutter
  • 6pav buns
  • to tastefine sea salt

Method

  1. Begin by peeling and dicing the 4 potatoes into small cubes. Cut the cauliflower into small florets and dice the capsicum. Chop the tomatoes finely. This preparation ensures even cooking and allows the vegetables to blend smoothly into the bhaji.
  2. In a large, heavy-bottomed pan, melt 50 g of butter over medium heat. Add the diced potatoes, cauliflower florets, and capsicum. Stir occasionally, allowing the vegetables to soften and the butter to infuse them with flavor. The vegetables should start to become tender and the butter should take on a slightly nutty aroma.
  3. Add the chopped tomatoes to the pan. Stir them into the mixture and let them cook until they break down and release their juices, creating a thick, fragrant base. This should result in a rich, reddish mixture as the tomatoes meld with the butter and vegetables.
  4. Sprinkle 2 tbsp of pav bhaji masala over the vegetable mixture. Stir well to ensure the spices coat the vegetables evenly. Continue to cook until the spices are well incorporated and the mixture becomes aromatic, with a deep, inviting color.
  5. Using a potato masher, mash the mixture directly in the pan. The goal is to achieve a smooth, slightly chunky consistency, typical of Pav Bhaji. The mashed vegetables should blend together, with some texture remaining for a hearty feel.
  6. Taste the bhaji and add fine sea salt to your preference. Stir well to ensure the salt is evenly distributed. Adjust the seasoning as necessary, keeping in mind that the flavors should be bold and well-balanced.
  7. Slice the pav buns in half and toast them lightly in a separate pan with a little butter until golden brown. Serve the Pav Bhaji hot, with the toasted buns on the side, ready for dipping and sharing.
