Pla Pao

Pla Pao, a classic in Thai home cooking, is a dish that embraces the simplicity and depth of flavor that define Thai cuisine. Traditionally enjoyed during lively family gatherings or shared meals, this salt-crusted grilled fish brings a sense of occasion to any table. The method of grilling with a generous crust of coarse salt is a practice rooted in the heart of Thai culinary traditions, ensuring the fish remains moist and flavorful.

The beauty of Pla Pao lies in its textural contrast and vibrant flavors. The coarse salt crust locks in moisture, creating tender, aromatic flesh infused with the subtle aroma of lemongrass. Paired with the zingy and spicy nam jim seafood sauce, each bite is a perfect balance of saline, herbal, and spicy notes. Serve it whole at the center of the table, inviting everyone to dig in and savor this communal culinary experience.

Ingredients

  • 1whole fish
  • 1 handfullemongrass
  • coarse saltcrust
  • nam jim seafood — to serve
  • to tastefine sea salt

Method

  1. Start by cleaning the whole fish thoroughly under cold running water, removing any scales and innards. Pat the fish dry with paper towels, ensuring there is no excess moisture, as this will help the salt crust adhere better.
  2. Take a handful of lemongrass and bruise it slightly with the back of a knife to release its aromatic oils. Stuff the cavity of the fish with the lemongrass, which will infuse the fish with its fragrance during cooking.
  3. Prepare a coarse salt crust by mixing coarse salt with a small amount of water until it resembles wet sand. Pack this mixture evenly over the entire surface of the fish, pressing gently to form a solid crust that will insulate the fish and keep it moist.
  4. Preheat a grill or a large skillet over medium-high heat. If using a skillet, add a generous amount of oil to create a base for the fish to cook evenly and prevent sticking.
  5. Place the salt-crusted fish onto the grill or skillet. Cook the fish until the flesh is just opaque and flakes easily with a fork, which should take about 10-15 minutes per side depending on the size of the fish. The salt crust will harden and may crack slightly, which is normal.
  6. Once the fish is cooked, carefully remove it from the heat and gently crack open the salt crust. Brush off any excess salt and remove the lemongrass from the cavity.
  7. Taste the fish for seasoning. If needed, sprinkle a little fine sea salt to enhance the flavors, but be cautious as the salt crust will have already seasoned the fish.
  8. Serve the Pla Pao immediately with nam jim seafood on the side for dipping. The fish should be moist and flavorful, perfect for sharing at the table.
