Ingredients

Method

  1. Start by cleaning the sardines. Rinse 1 kg of fresh sardines under cold water to remove any scales and debris. Use a sharp knife to make a small incision along the belly and gently remove the innards. Rinse again and pat dry with paper towels to ensure they sear properly.
  2. Heat a large grill pan over medium-high heat. Pour in 80 ml of olive oil, allowing it to coat the bottom of the pan evenly. This will create a fragrant base that enhances the flavor of the sardines.
  3. Place the cleaned sardines in the hot pan in a single layer, ensuring they do not overlap. Cook for about 2-3 minutes on each side. You will know they are ready to flip when the flesh turns opaque and the skin is slightly crispy.
  4. While the sardines are cooking, juice 2 lemons. Once the sardines are cooked through, drizzle the lemon juice over them while they are still in the pan. This will add a bright, fresh flavor that complements the richness of the fish.
  5. Sprinkle a generous amount of oregano over the sardines, allowing the heat from the pan to release its aroma. This step should be done just before removing the sardines from the heat to preserve the herb's freshness.
  6. Taste a piece of sardine to check for seasoning. Add fine sea salt to taste, keeping in mind that the salt should enhance the natural flavors without overpowering them.
  7. Transfer the sardines to a serving platter immediately. Serve hot, with extra lemon wedges on the side for those who prefer a more pronounced citrus flavor.
