Spaghetti ai Gamberi e Zucchine

Serves 4

Spaghetti ai Gamberi e Zucchine

Spaghetti ai Gamberi e Zucchine finds its roots in the sunlit kitchens of coastal Italy, where summer's bounty meets the sea's offerings. This dish is a celebration of the season, often prepared when zucchinis are at their peak and shrimp are freshly caught. Traditionally enjoyed during leisurely summer lunches, it encapsulates the simplicity and elegance of Italian coastal cooking.

The taste is a vibrant melody of tender shrimp, lightly sautéed zucchini, and fragrant garlic, all kissed by the brightness of fresh lemon juice. Olive oil binds these flavors together, creating a silky coating over the spaghetti. Each bite is a balance of sea and garden, a true taste of summer in every forkful.

Ingredients

  • 400 gspaghetti
  • 400 gshrimp
  • 2zucchini
  • 2garlic cloves
  • 1lemon
  • 3 tbspolive oil
  • to tastefine sea salt

Method

  1. Fill a large pot with water and bring it to a rolling boil. Add a generous amount of fine sea salt to the water, which should taste like the sea. This step is crucial for seasoning the spaghetti as it cooks.
  2. While the water is heating, prepare the sauce. In a wide pan, heat 3 tablespoons of olive oil over medium heat. Add 2 finely chopped garlic cloves and sauté until they are fragrant and just beginning to turn golden, which will infuse the oil with flavor.
  3. Slice the 2 zucchini into thin rounds and add them to the pan. Cook, stirring occasionally, until the zucchini are tender and slightly golden at the edges. This should take about 5 minutes, and the zucchini should have a soft texture with a hint of color.
  4. Add the 400 g of shrimp to the pan. Cook until the shrimp turn pink and opaque, indicating they are cooked through. Taste the mixture and add fine sea salt as needed to enhance the flavors.
  5. Once the water is boiling, add 400 g of spaghetti to the pot. Cook until the pasta is just shy of al dente, as it will finish cooking in the sauce. Reserve a cup of the starchy pasta water before draining.
  6. Transfer the drained spaghetti to the pan with the shrimp and zucchini. Toss everything together over medium heat, adding a splash of the reserved pasta water to help the sauce cling to the spaghetti and achieve a silky texture.
  7. Finish with a squeeze of fresh lemon juice from 1 lemon to brighten the flavors. Serve the Spaghetti ai Gamberi e Zucchine hot, ensuring each serving has a good mix of shrimp, zucchini, and pasta.
