Spaghetti alla Bottarga

Serves 4

Spaghetti alla Bottarga

Spaghetti alla Bottarga hails from the sun-drenched island of Sardinia, where the sea’s bounty is central to local cuisine. This dish is a celebration of simplicity and the island’s love affair with its own salty treasure, bottarga—a delicacy of cured fish roe that transforms ordinary spaghetti into something richly memorable. It’s a dish often savored when the sun dips low and friends gather for a relaxed meal by the Mediterranean.

The taste is a sublime balance of the sea's essence and the earth’s freshness. Bottarga lends a savory depth, while garlic and parsley offer brightness, and a squeeze of lemon accentuates the flavors with a gentle zing. Olive oil binds it all, ensuring that each strand of spaghetti glistens with understated elegance. A sprinkle of fine sea salt completes the dish, inviting each bite to evoke the Sardinian coast.

Ingredients

  • 400 gspaghetti
  • 40 gbottarga
  • 3garlic cloves
  • 4 tbspolive oil
  • 1lemon
  • 1 handfulparsley
  • to tastefine sea salt

Method

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Once boiling, add a generous amount of fine sea salt until the water tastes like the sea. This will season the spaghetti as it cooks, enhancing the overall flavor of the dish.
  2. While the water is heating, finely grate 40 g of bottarga and set it aside. Peel and thinly slice 3 garlic cloves. Chop a handful of parsley and zest one lemon, setting these aside separately for later use.
  3. In a wide pan, pour 4 tbsp of olive oil and heat it over medium-low heat. Add the sliced garlic and sauté gently until it becomes fragrant and just begins to turn golden, being careful not to let it brown, as this would impart a bitter taste.
  4. Once the garlic is ready, remove the pan from the heat and add the grated bottarga. Stir the mixture to combine, allowing the residual heat to gently warm the bottarga, releasing its aroma and flavor into the oil.
  5. Add the spaghetti to the boiling water and cook until it is just shy of al dente. This means the pasta should still have a slight firmness in the center when bitten. Reserve a cup of the starchy pasta water before draining.
  6. Return the wide pan with the bottarga mixture to low heat. Add the drained spaghetti to the pan, tossing it to coat evenly with the bottarga and garlic-infused oil. Gradually add the reserved pasta water, a little at a time, to loosen the mixture and create a silky sauce that clings to the pasta.
  7. Taste the pasta and adjust the seasoning with fine sea salt if necessary. Add the chopped parsley and lemon zest, tossing once more to distribute evenly. Serve the Spaghetti alla Bottarga hot, ensuring each plate has a generous coating of the flavorful sauce.
