Tawa Qeema

Serves 4 to 6 meat

Tawa Qeema

Tawa Qeema is a beloved dish from the bustling city of Lahore, where the street-side tawa—the large, flat griddle—sings with the sizzle of spiced meats. This dish is a home-cooked rendition, capturing the essence of Lahore's vibrant food scene. It's a staple that finds its place at the heart of family meals, where the robust flavors of beef and aromatic spices create a comforting, shared experience.

The taste of Tawa Qeema is a rich blend of succulent minced beef, tangy tomatoes, and a lively kick from green chilies. The ginger infuses warmth, while the generous use of fat enhances the dish's depth. Salt, judged by hand, balances the flavors perfectly. Serve it hot, directly from the tawa, and let everyone dig in, savoring the spicy, savory notes that linger with each bite.

Ingredients

  • 500 gminced beef
  • 2tomatoes
  • 4green chilies
  • 1 tbspginger
  • 3 tbspoil
  • to tastefine sea salt

Method

  1. Start by heating 3 tablespoons of oil in a large, flat tawa or heavy-bottomed skillet over medium-high heat. The wide surface area of the tawa allows for even cooking and browning of the meat. Once the oil is shimmering, add 500 g of minced beef to the pan.
  2. Sprinkle the minced beef with fine sea salt to taste, ensuring the salt is evenly distributed. Use a spatula to break up the meat into small pieces. Cook the beef until it turns a deep brown color, stirring occasionally to ensure even browning. The deep brown color indicates that the meat is caramelizing, which adds rich flavor to the dish.
  3. While the beef is browning, finely chop 2 tomatoes and 4 green chilies. Once the beef is browned, add the chopped tomatoes and chilies to the pan. Stir well to combine, allowing the tomatoes to release their juices and create a flavorful base.
  4. Add 1 tablespoon of ginger, finely grated, to the mixture. Stir the ginger into the beef and vegetable mixture, allowing its aroma to infuse the dish. Continue to cook until the tomatoes have softened and integrated into the mixture, creating a thick, cohesive sauce.
  5. Reduce the heat to medium-low and cover the pan. Allow the mixture to braise gently, stirring occasionally, until the beef is tender and the flavors have melded together. The beef should be soft and the sauce should have a rich, concentrated flavor.
  6. Taste the Tawa Qeema and adjust the salt if necessary. The dish should have a balanced, savory flavor with a hint of heat from the chilies. Serve the Tawa Qeema hot with rice, bread, or a fresh salad, inviting everyone to share in this traditional Pakistani meal.
