Ingredients

  • 800 gbeef cubes

Method

  1. Begin by placing 800 g of beef cubes in a large mixing bowl. Sprinkle them generously with fine sea salt and 1 tsp of cumin, ensuring each piece is evenly coated. This step infuses the beef with flavor, so take your time to mix well using your hands.
  2. Peel and finely chop 1 onion. In a large skillet or grill pan, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the chopped onion and sauté until it becomes translucent and fragrant, which should take about 2-3 minutes.
  3. Add the seasoned beef cubes to the pan with the onions. Spread them out in a single layer to ensure even browning. Allow the beef to brown on one side without moving them for about 3-4 minutes, or until a deep, rich color develops on the surface.
  4. Turn the beef cubes to brown the other sides, continuing to cook until all sides are evenly colored. This caramelization adds depth to the flavor. If the pan seems dry, add a little more oil to prevent sticking.
  5. Once the beef is well-browned, you can choose to either braise or grill the skewers. For braising, add a small amount of water to the pan, cover, and reduce the heat to low. Cook until the beef is tender and easily pierced with a fork, about 10-15 minutes. For grilling, thread the beef cubes onto skewers and grill over medium heat until tender, turning occasionally.
  6. Taste a piece of beef to check for seasoning. Add more salt or black pepper to taste if needed. The beef should be juicy and flavorful, with a slight char on the outside.
