Ingredients

  • 300 gbrown lentils
  • 1onion

Method

  1. Start by rinsing 300 g of brown lentils under cold water until the water runs clear. This removes any dust or debris and ensures the lentils cook evenly. Set them aside to drain while you prepare the other ingredients.
  2. Dice 1 onion and 2 tomatoes into small, even pieces. This ensures they cook at the same rate, creating a harmonious base for your dish. Season the diced tomatoes with a pinch of fine sea salt and black pepper to draw out their juices and enhance their flavor.
  3. In a large saucepan, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the diced onion. Cook the onion slowly, stirring occasionally, until it becomes translucent and soft, which should take about 5-7 minutes. This slow cooking releases the onion's natural sweetness, forming a flavorful base.
  4. Add 1 tsp of cumin to the softened onions. Stir continuously for about a minute until the cumin becomes fragrant, enhancing the dish with its warm, earthy aroma. This step blooms the spice, releasing its essential oils into the oil.
  5. Add the seasoned tomatoes to the pan, stirring them into the onion and cumin mixture. Cook until the tomatoes begin to break down and their juices are released, creating a thick, aromatic sauce. This should take about 5 minutes, and you'll notice the mixture becoming more cohesive and saucy.
  6. Add the rinsed lentils to the pan, stirring them into the tomato mixture. Pour in enough water to cover the lentils by about an inch. Bring the mixture to a gentle simmer, adjusting the heat as necessary to maintain this gentle bubbling. Cook, stirring occasionally, until the lentils are tender and have absorbed most of the liquid, resulting in a creamy texture.
  7. Once the lentils are cooked to your desired tenderness, taste the dish and adjust the seasoning with more fine sea salt and black pepper if needed. The lentils should be soft but still hold their shape, and the flavors should be well-balanced. Serve the Thai Lentil Bowl 2 warm, ready for sharing at the table.
