Thai Lentil Bowl

Serves 4 to 6 Entree vegetarian

Thai Lentil Bowl

Thai Lentil Bowl is a comforting dish often found gracing the tables of Thai homes, especially during the cooler months. Unlike the more elaborate street food, this dish is a staple of the family kitchen, prepared with a sense of ease and familiarity. It reflects the informal yet heartfelt approach to cooking that is the hallmark of home meals in Thailand.

The dish offers a warm embrace of earthy lentils, softened onions, and ripe tomatoes, all brought together with the gentle heat of cumin. Generously seasoned with fine sea salt and black pepper, each mouthful is a balance of savory and aromatic notes, inviting you to linger and savor its homely flavors.

Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Rinse 300 g of brown lentils under cold water until the water runs clear to remove any debris or dust. Set them aside to drain. Dice 1 onion finely and chop 2 tomatoes into small cubes. This preparation ensures even cooking and a harmonious blend of flavors.
  2. In a large saucepan, heat 2 tbsp of oil over medium heat. Add the diced onion and sauté gently, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. This slow cooking allows the onion to release its natural sweetness, forming a flavorful base for the dish.
  3. Add 1 tsp of cumin to the softened onions and stir for about 1 minute until the cumin becomes fragrant. This step releases the essential oils in the cumin, enhancing the aromatic profile of the dish.
  4. Stir in the chopped tomatoes and cook until they start to break down and meld with the onions, creating a thick, rich base. This should take about 5 minutes, and you'll notice the tomatoes turning soft and juicy.
  5. Add the rinsed lentils to the saucepan and stir to coat them with the onion-tomato mixture. Pour in enough water to cover the lentils by about 2 cm. Bring the mixture to a gentle simmer over medium heat, then reduce the heat to low, cover, and cook until the lentils are tender but not mushy, stirring occasionally. The lentils should be soft and creamy to the bite, absorbing the flavors of the base.
  6. Once the lentils are cooked to the desired texture, season the dish with fine sea salt and black pepper to taste. Stir well and let it sit for a couple of minutes off the heat, allowing the flavors to meld together.
  7. Serve the Thai Lentil Bowl warm, setting it in the center of the table for sharing. This dish embodies the essence of Thai home cooking, where the balance of flavors and communal dining are celebrated.
