Thai Squid Stir-Fry 2

Thai Squid Stir-Fry 2 is a cherished staple at Thai family tables, where it is cooked with an instinctive hand, capturing the essence of home-style cooking. This is not a dish for festive occasions or grand gatherings, but rather a beloved weekday meal, crafted with care and shared among family members. It embodies the simplicity and warmth of everyday Thai cuisine, where ingredients are measured by feel and taste, not by strict recipes.

The dish offers a delightful balance of tender squid and aromatic garlic, punctuated by the subtle heat of chili and the brightness of freshly squeezed lemon. Generous use of oil ensures a rich, glossy coating, while fine sea salt enhances the natural flavors, making each bite a harmonious blend of textures and tastes. Ideal for sharing, this stir-fry invites everyone to savor the communal joy of a well-cooked meal, just as it is enjoyed in Thai homes.

Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil
  • to tastechili
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Start by thoroughly rinsing the 600 g of squid rings under cold running water to remove any residual grit or impurities. Pat them dry with a clean kitchen towel to ensure they don't release excess water during cooking, which would dilute the flavors.
  2. Peel and finely chop 4 cloves of garlic. In a large wok or a deep frying pan, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the chopped garlic and stir-fry until it turns a light golden brown and releases a fragrant aroma.
  3. Add the squid rings to the pan, stirring continuously. Cook them over medium-high heat, ensuring they are evenly coated with the garlic-infused oil. The squid should turn opaque and firm up slightly, which indicates they are cooked through. This should happen quickly, so keep a close eye to avoid overcooking.
  4. Once the squid is just cooked, squeeze the juice of one lemon over the mixture, stirring to combine. Add chili to taste, adjusting the heat level to your preference. Stir well to ensure the flavors meld together.
  5. Taste the dish and add fine sea salt to your liking, stirring to distribute evenly. Serve the stir-fry immediately while it's hot, allowing the fresh, vibrant flavors to shine. This dish is best enjoyed shared at the table, capturing the essence of Thai home cooking.
