Thai Squid Stir-Fry

Thai Squid Stir-Fry is a beloved staple at home dining tables across Thailand. It's a dish that captures the essence of everyday cooking, where ingredients are measured more by instinct than by precision. The squid is sliced into rings, then quickly sautéed to maintain its tender texture, making it a popular choice for family meals where the emphasis is on ease and flavor.

The taste of this stir-fry is a vibrant dance between the heat of fresh chili and the brightness of lemon juice. Garlic infuses the dish with its aromatic depth, while a generous sprinkle of fine sea salt enhances the natural sweetness of the squid. This dish is all about the joy of sharing, inviting everyone to savor each bite together.

Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil
  • to tastechili
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Begin by ensuring the 600 g squid rings are thoroughly cleaned and patted dry with a paper towel. This step is crucial to prevent excess moisture from diluting the flavors and to help the squid cook evenly.
  2. Peel and finely chop 4 cloves of garlic. Heat 2 tablespoons of oil in a large wok or frying pan over medium-high heat. Once the oil is shimmering, add the garlic and stir-fry until it becomes golden and fragrant, about 1 to 2 minutes. This step builds the aromatic base for the dish.
  3. Add the squid rings to the pan, stirring frequently. Cook them until they turn just opaque and firm, which should take about 2 to 3 minutes. Be careful not to overcook, as squid can become rubbery if cooked too long.
  4. Add chili to taste, adjusting the amount based on your preferred level of heat. Squeeze the juice of one lemon over the squid and give everything a good stir to combine the flavors.
  5. Taste the dish and add fine sea salt to your liking, stirring well to ensure even seasoning. Serve the Thai Squid Stir-Fry immediately, while it's hot, to enjoy the fresh flavors and tender texture.
