Method

  1. Start by preparing the trout. Place the 4 whole cleaned trout on a large tray or cutting board. Generously sprinkle salt both inside the cavity and on the outside of each fish. This will enhance the natural flavors of the trout and help to draw out moisture, ensuring a crispy skin.
  2. Slice the 2 lemons into thin rounds. Insert a few slices into the cavity of each trout, which will infuse the fish with a fresh, citrusy aroma as it cooks. This step is crucial for balancing the rich, fatty flavor of the trout.
  3. Using a brush, lightly coat the outside of each trout with olive oil. The oil will prevent the fish from sticking to the grill and help achieve a beautifully crisp skin. Ensure the fish is evenly coated for the best results.
