White-Cut Chicken

Serves 4 to 6 chicken

White-Cut Chicken

White-Cut Chicken, or "Bai Qie Ji," hails from the heart of Cantonese home cooking, where the art of simplicity shines. Traditionally enjoyed during family meals or festive occasions, this dish epitomizes the elegance of minimalism, using only a handful of ingredients to create something truly special. It's an invitation to gather around the table, where the focus is on the quality of the chicken and the skillful balance of flavors.

Tender and succulent, the chicken is infused with the warmth of ginger and the subtle aroma of scallions. Every bite is a delicate dance of flavors, enhanced by a whisper of soy sauce and a sprinkle of fine sea salt. The dish is finished with a generous drizzle of ginger-scallion oil, creating a harmonious blend that delights the palate and warms the spirit.

Ingredients

  • 1whole chicken
  • 6 slicesginger
  • 4scallions
  • 4 tbspginger-scallion oil
  • 1 tbspsoy sauce
  • to tastefine sea salt

Method

  1. Start by thoroughly patting the whole chicken dry with paper towels. This step is crucial to ensure a good sear and to remove any excess moisture that could prevent browning. Once dry, generously season the chicken all over with fine sea salt, making sure to get into the cavity as well.
  2. In a large pot, heat 4 tablespoons of ginger-scallion oil over medium-high heat. Once the oil is shimmering, carefully place the chicken breast-side down into the pot. Allow it to brown for about 5 minutes, turning occasionally to ensure even browning on all sides. The skin should be a light golden color, which will help lock in the juices.
  3. Add 6 slices of ginger and 4 scallions, cut into sections, around the chicken. Lower the heat to medium, cover the pot, and let the chicken cook gently. The aromatics will infuse the chicken with their flavors, and you should start to smell the ginger and scallions becoming fragrant. Cook until the chicken is tender and the juices run clear when pierced, about 40 minutes, turning the chicken halfway through.
  4. Once the chicken is cooked, carefully remove it from the pot and set it aside on a cutting board to rest. This resting period allows the juices to redistribute throughout the meat, ensuring a moist and flavorful chicken.
  5. If there is excess liquid in the pot, increase the heat to high and let it reduce until slightly thickened. Taste the sauce and adjust the seasoning with more salt if necessary. The sauce should be flavorful and aromatic, complementing the chicken perfectly.
  6. To serve, carve the chicken into pieces and arrange them on a serving platter. Drizzle with the reduced sauce and finish with a tablespoon of soy sauce for added depth. Serve the chicken warm, garnished with freshly chopped scallions if desired, and enjoy it with family and friends.
