Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Take the 100 g of butter out of the refrigerator and let it sit at room temperature until it becomes soft and spreadable. This will make it easier to work with when layering the pastry sheets. Meanwhile, grate the 200 g of cheese and set it aside for later use.
  2. Lay out one of the 10 pastry sheets on a clean, flat surface. Use a pastry brush to generously spread a thin layer of the softened butter over the entire surface of the pastry sheet. This will help create a rich, flaky texture in the final pie.
  3. Sprinkle a portion of the grated cheese evenly over the buttered pastry sheet. Add a pinch of your chosen herbs to enhance the flavor, ensuring they are distributed evenly. Carefully place another pastry sheet on top, pressing gently to adhere.
  4. Repeat the layering process with butter, cheese, and herbs until all 10 pastry sheets are used. Make sure each layer is evenly coated to ensure consistent flavor and texture throughout the pie.
  5. Preheat your oven to 180°C (350°F). Transfer the layered pastry stack to a baking dish that fits the size of the sheets. This will help the layers cook evenly and prevent the edges from burning.
  6. Place the baking dish in the preheated oven and bake until the top layer of the pastry is golden brown and crisp. The cheese should be melted and bubbly, indicating that the layers have fused together properly.
  7. Remove the pie from the oven and let it cool slightly in the dish. This resting period allows the layers to set and makes it easier to slice without falling apart.
