  2. In a large mixing bowl, cream together the 100 g of softened butter and 150 g of sugar. Use a wooden spoon or an electric mixer on medium speed until the mixture is pale and fluffy. This process incorporates air into the batter, which helps the cake rise.
  3. Add the 3 room-temperature eggs to the butter and sugar mixture, one at a time. Beat well after each addition until fully incorporated. This gradual addition helps maintain the emulsion and prevents the batter from curdling.
  4. Sift 200 g of flour into the bowl with the wet ingredients. Gently fold the flour into the mixture using a spatula, taking care not to overmix. Stop when the flour is just incorporated and the batter is smooth, ensuring the cake remains light and tender.
