Galaktoboureko Individual

Galaktoboureko Individual is a nod to the Greek zaharoplasteia, those pastry shops where indulgence is crafted with care and familiarity. This home version captures the essence of those bustling kitchens, where olive oil flows freely, salt is pinched intuitively, and lemons are always at the ready. It’s the kind of dessert that finds its place on a Greek table without ceremony, yet with an undeniable presence.

Expect a crisp phyllo embrace, giving way to a creamy, semolina-based custard that whispers of milk and honey. The honey syrup seeps through, ensuring each bite is both sweet and fragrant. Serve it slightly warm, allowing the flavors to meld and the texture to shine.

Ingredients

  • 500 mlmilk
  • 100 gsemolina
  • 100 gsugar
  • 2eggs
  • 6 sheetsphyllo
  • 80 gbutter
  • honey syrupto soak

Method

  1. Begin by bringing 500 ml of milk to a gentle simmer in a medium saucepan over medium heat. Stir occasionally to prevent a skin from forming. Once small bubbles form around the edges, remove from heat and let it cool slightly.
  2. In a separate bowl, whisk together 100 g semolina and 100 g sugar. Gradually add the warm milk to the semolina mixture, whisking continuously to avoid lumps. The mixture should become smooth and slightly thickened.
  3. In another bowl, beat 2 eggs until frothy. Slowly incorporate the eggs into the semolina mixture, whisking constantly to ensure they do not scramble. Return the mixture to the saucepan and cook over low heat, stirring continuously until it thickens to a custard-like consistency. The custard is ready when it coats the back of a spoon.
  4. Melt 80 g butter in a small saucepan over low heat. Use a pastry brush to lightly grease the insides of individual baking dishes or ramekins with some of the melted butter. Layer a sheet of phyllo in each dish, allowing the excess to hang over the edges. Brush the phyllo with more butter, and repeat with two more sheets, buttering each layer.
  5. Spoon the custard evenly into each prepared dish, smoothing the tops with a spatula. Fold the overhanging phyllo over the custard, brushing each layer with butter as you fold. Finish with a final sheet of phyllo on top, tucking in the edges and brushing generously with the remaining butter.
  6. Preheat your oven to 180°C (350°F). Place the dishes on a baking tray and bake in the preheated oven until the phyllo is golden brown and crisp, about 25-30 minutes. The tops should be a deep golden color, and the custard should be set.
  7. While the Galaktoboureko bakes, prepare the honey syrup by heating equal parts honey and water in a small saucepan until combined and slightly thickened. Once the pastries are baked, remove them from the oven and immediately pour the warm syrup over each one, allowing it to soak in.
  8. Let the Galaktoboureko cool slightly before serving. The pastry should be crisp, and the custard should be creamy and fragrant with the aroma of honey. Serve warm for the best texture and flavor.
