Ensalada de Palta

Ensalada de Palta is a simple yet flavorful salad commonly enjoyed in the northwest of Argentina and in any kitchen where ripe avocados are ready to be transformed. This dish combines creamy avocados with the zesty brightness of lemon, the sharpness of onion, and the juiciness of tomatoes, creating a refreshing and satisfying lunch option.

The taste of Ensalada de Palta is a harmonious blend of creamy, tangy, and savory notes. The ripe avocados provide a smooth and rich base, while the lemon juice adds a fresh, citrusy kick. Diced tomatoes contribute a burst of sweetness, and the minced onion offers a subtle bite, all brought together with a drizzle of olive oil and a sprinkle of salt to enhance the flavors.

Ingredients

  • 2ripe avocados
  • 2tomatoes, diced
  • 1/2onion, minced
  • 1lemon
  • 2 tbspolive oil
  • to tastesalt

Method

  1. Begin by preparing the avocados. Cut each avocado in half lengthwise and remove the pit. Use a spoon to gently scoop out the flesh, then dice the avocado into bite-sized cubes. Do this step just before mixing to prevent the avocado from browning.
  2. In a medium-sized mixing bowl, combine the diced avocados with the diced tomatoes and minced onion. Ensure that the tomatoes are diced evenly so that they mix well with the avocado and onion.
  3. Squeeze the juice of one lemon over the avocado mixture. The acidity of the lemon will help preserve the vibrant color of the avocados and add a refreshing tang to the salad.
  4. Drizzle 2 tablespoons of olive oil over the salad. The olive oil will add a rich, smooth texture to the dish and help bind the ingredients together.
  5. Season the salad with salt to taste. Start with a small amount and gradually add more if needed, mixing gently to ensure even distribution without mashing the avocado.
  6. Fold the ingredients together gently using a spatula or large spoon. Be careful not to mash the avocado; you want to maintain the integrity of the cubes for a classic salad texture.
  7. Taste the salad. It should have a bright, lemony flavor that complements the creamy avocado. Adjust the seasoning if necessary, adding more lemon juice or salt as needed.
  8. Serve the Ensalada de Palta immediately. The freshness of the ingredients is key to the dish's appeal, and the salad is best enjoyed right after preparation.
