The salad bursts with the earthy richness of beans, balanced by the sharpness of vinegar and the warmth of olive oil. Fresh parsley adds a bright finish, while finely judged sea salt ties it all together. Each bite offers a satisfying mix of tender beans and crisp onions, making it a refreshing yet hearty choice.

Ingredients

  • 400 gcooked beans
  • 1onion
  • 80 mlolive oil
  • 2 tbspvinegar
  • parsley — chopped
  • to tastefine sea salt

Method

  1. Start by finely chopping 1 onion. The pieces should be small enough to blend well with the beans, adding flavor without overpowering the dish. Place the chopped onion in a large mixing bowl.
  2. Add 400 g of cooked beans to the bowl with the onion. Ensure the beans are well-drained and at room temperature to allow them to absorb the dressing flavors more effectively.
  3. Pour 80 ml of olive oil over the beans and onion. The oil should coat the beans evenly, giving them a glossy appearance and enhancing their natural flavors.
  4. Add 2 tablespoons of vinegar to the mixture. The vinegar will provide a tangy contrast to the richness of the olive oil, balancing the flavors.
  5. Season the salad with fine sea salt to taste. Start with a small amount, then mix and taste, adjusting as necessary. The salt should enhance the flavors without being too prominent.
  6. Finely chop a handful of parsley and add it to the salad. The parsley will add a fresh, herbaceous note and a pop of color.
  7. Gently toss the salad using a large spoon or your hands. The goal is to combine the ingredients without breaking the beans, maintaining their shape and texture.
  8. Serve the Pakistani Bean Salad immediately with bread. The salad should be vibrant and aromatic, with each ingredient contributing to a harmonious whole.
