Patlıcan Salatası

Patlıcan Salatası, a staple of Aegean Turkish cuisine, showcases the region's love for simplicity and bold flavors. Traditionally enjoyed as a meze, this dish graces tables during leisurely lunches and dinners, where sharing is as important as the food itself. It's a recipe passed down through generations, capturing the essence of home cooking with its straightforward yet satisfying preparation.

The taste is a harmonious blend of smoky eggplant, pungent garlic, and the bright acidity of fresh lemon juice, all enveloped in the richness of olive oil. Each bite delivers a creamy texture, perfectly balanced by a hint of salt that is judged by hand, just as Aegean cooks have done for centuries.

Ingredients

  • 3eggplants — charred
  • 2 clovesgarlic

Method

  1. Begin by roasting the 3 eggplants. Preheat your oven to 220°C (428°F). Place the eggplants directly on the oven rack and roast them until the skins are charred and the flesh is soft, about 30-40 minutes. The eggplants should collapse and be easy to pierce with a fork. This charring gives the salad its signature smoky flavor.
  2. While the eggplants are roasting, prepare the garlic. Peel and finely mince the 2 cloves of garlic. Set them aside in a small bowl. This will allow the garlic to mellow slightly before being added to the salad.
  3. Once the eggplants are roasted, remove them from the oven and let them cool slightly until they are comfortable to handle. Carefully peel off the charred skin, which should come away easily, revealing the tender flesh inside. Transfer the flesh to a large mixing bowl, discarding any excess liquid.
  4. Add the minced garlic to the eggplant flesh in the bowl. Pour in 80 ml of olive oil, ensuring it coats the eggplant evenly. Squeeze the juice of one lemon over the mixture, catching any seeds with your fingers or a strainer. Season with fine sea salt to taste, starting with a small pinch and adjusting as needed.
  5. Gently toss the mixture with a fork or spoon, being careful not to mash the eggplant too much. The goal is to keep some texture in the salad, with pieces of eggplant remaining intact for a satisfying bite.
  6. Transfer the Patlıcan Salatası to a serving platter or bowl. Serve immediately with fresh bread, allowing diners to scoop up the salad and enjoy its smoky, tangy flavors. This dish is best enjoyed fresh, capturing the essence of Aegean home cooking.
