Shrimp and Dill Pasta Salad

Serves 4

Shrimp and Dill Pasta Salad

Shrimp and Dill Pasta Salad draws inspiration from the chilled seafood bowls that grace many summer tables, offering a refreshing break from the heat. This dish is a perfect blend of simplicity and elegance, making it an ideal choice for warm afternoons or light evening meals. The shrimp, paired with dill and lemon, brings a coastal breeze to the pasta, letting the flavors shine without the need for heavy sauces.

Expect a cool, zesty bite with each forkful. The shrimp's sweetness is complemented by the bright citrus notes of lemon and the herbaceous touch of dill, while a touch of olive oil ensures the pasta maintains its delicate separation. The subtle crunch of celery adds texture, creating a harmonious balance of flavors and sensations.

Ingredients

  • 400 gshells
  • 400 gcooked shrimp
  • 1lemon
  • 1 handfuldill
  • 2 tbspolive oil
  • 1celery stalk
  • to tastefine sea salt

Method

  1. Fill a large pot with water and bring it to a boil. Add a generous amount of fine sea salt to the water, which should taste like the sea. Add 400 g of pasta shells to the boiling water and cook until they are al dente, which means they should be tender yet firm to the bite. Once done, drain the pasta in a colander and rinse briefly under cold water to stop the cooking process.
  2. Transfer the drained pasta to a large mixing bowl. Drizzle 2 tablespoons of olive oil over the pasta and gently toss to coat each shell. This will prevent the pasta from sticking together as it cools and ensures a smooth texture in the final dish.
  3. Prepare the vegetables by finely chopping 1 celery stalk and roughly chopping a handful of fresh dill. The celery should be cut into small, even pieces for a consistent crunch throughout the salad.
  4. Add the chopped celery and dill to the bowl with the cooled pasta. Gently fold in 400 g of cooked shrimp, ensuring that the shrimp are evenly distributed throughout the pasta.
  5. For the dressing, zest and juice 1 lemon directly into the pasta mixture. The lemon zest will add a fragrant citrus note, while the juice provides a bright acidity that complements the shrimp and dill.
  6. Gently toss the pasta salad to combine all the ingredients, making sure each bite will have a bit of shrimp, dill, and celery. Taste the salad and add fine sea salt as needed, adjusting to your personal preference.
  7. Serve the Shrimp and Dill Pasta Salad cool, allowing the flavors to meld together. Avoid serving it ice-cold, as this can dull the flavors. Enjoy as a refreshing dish perfect for warm weather or as a light meal.
