Ingredients

  • 400 gLyoner sausage — julienned
  • 2pickles — julienned
  • 1onion — thinly sliced
  • 3 tbspwhite wine vinegar
  • 4 tbspoil
  • 1 tspmustard
  • 1 tspsweet paprika

Method

  1. Begin by preparing the components for the Wurstsalat. Slice 400 g of Lyoner sausage into thin, even rounds, about 2-3 mm thick. This ensures that each piece absorbs the dressing evenly. Next, cut 2 pickles into thin slices, similar in thickness to the sausage, to maintain a consistent texture throughout the salad. Peel and finely slice 1 onion into thin rings, which will add a sharp contrast to the other ingredients.
  2. In a small bowl, whisk together 3 tablespoons of white wine vinegar, 4 tablespoons of oil, and 1 teaspoon of mustard. Add 1 teaspoon of sweet paprika to the mixture. Whisk until the dressing is well combined and slightly thickened, ensuring it clings to the back of a spoon. Season the dressing with fine sea salt and black pepper to taste, adjusting the seasoning until it is balanced and flavorful.
  3. Place the sliced sausage, pickles, and onions into a large mixing bowl. Pour the prepared dressing over the top. Using a large spoon or your hands, gently toss the ingredients together. Be careful to keep the sausage slices intact while ensuring that each piece is well coated with the dressing.
  4. Allow the Wurstsalat to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste of the salad. During this time, the onions will soften slightly, and the sausage will absorb the tangy dressing.
  5. Just before serving, taste the salad and adjust the seasoning if necessary, adding more salt or pepper to taste. If desired, finish with a sprinkle of freshly chopped herbs such as parsley or chives, which will add a fresh, vibrant note to the dish.
