Curd Rice

Curd Rice, a staple from Tamil Nadu, finds its place on the table in homes where simplicity meets comfort. It's a dish that speaks of everyday life, a soothing constant in the midst of bustling routines. Traditionally prepared with care, it's a reminder of the flavors that define southern Indian kitchens, often served as a cooling end to a meal or just when the palate craves something gentle and familiar.

The taste of Curd Rice is a gentle embrace—creamy yogurt melding seamlessly with tender rice, punctuated by the warmth of mustard seeds and the earthiness of urad dal. The curry leaves and green chili add a subtle, aromatic lift, while the salt, measured by hand, ensures a perfect balance. Each spoonful is a harmonious blend of textures and flavors, inviting seconds and shared moments at the table.

Ingredients

  • 400 gcooked rice
  • 300 gyogurt
  • 1 tspmustard seeds
  • 1 tspurad dal
  • 8curry leaves
  • 1green chili
  • to tastefine sea salt

Method

  1. Begin by finely chopping 1 green chili. This ensures that the heat is evenly distributed throughout the dish. If you prefer less heat, you can remove the seeds before chopping.
  2. In a large mixing bowl, combine 400 g cooked rice with 300 g yogurt. Use a spoon or your hands to mix until the rice is well-coated and creamy. The yogurt should envelop the rice, creating a smooth texture.
  3. Heat 2 tablespoons of oil in a small pan over medium heat. Once the oil is hot, add 1 teaspoon mustard seeds. Allow them to splutter, which releases their nutty aroma and flavor.
  4. Add 1 teaspoon urad dal to the pan. Stir continuously until the dal turns golden brown, which indicates it is cooked and has a crunchy texture.
  5. Add the chopped green chili and 8 curry leaves to the pan. Sauté for about 30 seconds until the curry leaves become crisp and the chili releases its aroma.
  6. Pour the tempered mixture over the yogurt rice. Mix thoroughly to ensure the flavors are evenly distributed throughout the dish.
  7. Season with fine sea salt to taste. Mix again, tasting as you go to achieve the desired level of seasoning.
  8. Serve the Curd Rice warm, allowing the creamy texture and the aromatic tempering to shine. This dish is best enjoyed when shared with others, embodying the communal spirit of Tamil Nadu cooking.
