Cuscuz Nordestino

Serves 4 to 6 vegan

Cuscuz Nordestino

Cuscuz Nordestino is a staple of northeastern Brazilian homes, a dish that embodies the region's culinary simplicity and warmth. Traditionally enjoyed at breakfast or as a comforting side dish, it transforms humble ingredients into a fragrant delight. This version captures the essence of the family table, where cooks measure salt by instinct and embrace the richness of coconut milk.

The taste is a gentle balance of savory and slightly sweet, with the cornmeal soaking up flavors like a sponge. It has a tender, moist texture, thanks to the generous use of coconut milk and oil. Each bite whispers of the ocean breeze and the warmth of the Brazilian sun, making it a beloved addition to any meal.

Ingredients

  • 300 gflaked cornmeal
  • as neededwarm water
  • 1 tbspoil
  • to tastefine sea salt
  • as neededcoconut milk — to serve

Method

  1. Begin by preparing the flaked cornmeal. Place 300 g of flaked cornmeal in a large bowl. Gradually add warm water, a little at a time, while mixing with your hands until the cornmeal is evenly moistened but not soaked. The texture should be similar to wet sand, holding its shape when squeezed lightly.
  2. Set up a steamer or a large pot with a steaming basket. Fill the bottom with enough water to reach just below the basket. Bring the water to a gentle simmer over medium heat.
  3. While the water heats, prepare the vegetables. Dice an onion evenly to ensure they cook uniformly. This will help them soften at the same rate when sautéed.
  4. In a medium skillet, heat 1 tablespoon of oil over medium heat. Add the diced onion and sauté until they become translucent and soft, releasing a sweet aroma. This should take about 5 to 7 minutes.
  5. Transfer the moistened cornmeal into the steaming basket, spreading it out evenly. Cover the pot with a lid, ensuring it fits snugly to trap the steam. Steam the cornmeal for about 15 to 20 minutes, or until it becomes tender and fluffy, with a slight sheen on the surface.
  6. Once the cornmeal is steamed, carefully remove it from the heat. Drizzle a bit of coconut milk over the top, gently fluffing the cuscuz with a fork to incorporate the milk evenly. This will add a subtle richness and enhance the flavor.
  7. Season the cuscuz with fine sea salt to taste, mixing gently to distribute the salt evenly. Serve the Cuscuz Nordestino warm, allowing the flavors to meld together. This dish is perfect for sharing, embodying the warmth and hospitality of a Brazilian family meal.
