Korean Potato Side 2

Korean Potato Side 2 is a beloved dish found on many Korean home tables. It's a simple yet flavorful preparation where potatoes are cooked with a generous amount of oil and seasoned with paprika, fine sea salt, and black pepper. This dish captures the essence of Korean home cooking, where ingredients are judged by hand and shared among family and friends.

The taste is rich and comforting, with the paprika adding a subtle warmth to the potatoes. It's a straightforward dish that highlights the natural flavors of the ingredients, making it a staple in Korean households. This home version reflects how a Korean family cook would prepare it, focusing on flavor and simplicity.

Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel 1 kg of potatoes and cut them into even-sized cubes, about 2 cm each. This ensures they cook uniformly and absorb flavors evenly.
  2. In a large, deep frying pan, heat 80 ml of oil over medium heat. Once the oil is shimmering, add 1 finely chopped onion and sauté until it becomes soft and translucent, releasing its sweet aroma.
  3. Add the cubed potatoes to the pan, stirring them gently to coat with the oil and onion mixture. Continue to cook, stirring occasionally, until the potatoes begin to soften and develop a slight golden color on their edges.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to evenly distribute the spice. This will add a warm color and mild flavor to the dish.
  5. Continue cooking the potatoes until they are tender when pierced with a fork, and the edges are slightly crisped. This texture indicates they are perfectly cooked.
  6. Season the potatoes generously with fine sea salt and black pepper to taste, tossing them gently to ensure even seasoning throughout.
  7. Transfer the seasoned potatoes to a serving dish and serve warm, inviting everyone to share in this comforting Korean home-cooked side.
