Pickled Radish

Serves 4 to 6 vegan

Pickled Radish

Pickled Radish, a staple at northern Chinese tables, is a dish born from simplicity and generosity. Here, it is crafted with the hand-measured salt and abundant fat that characterize home-cooked meals in the region. This version captures the essence of a family kitchen, where recipes are preserved through practice rather than precise measurements, and sharing a table means sharing in tradition.

The taste is a harmonious blend of tang and heat, with the daikon's crispness contrasting the smooth richness of sesame oil. A hint of sweetness from sugar balances the sharpness of rice vinegar, while chili flakes add a gentle warmth. This dish is a perfect testament to the blend of flavors that mark authentic home-cooked Chinese fare.

Ingredients

  • 400 gdaikon
  • 2 tbsprice vinegar
  • 1 tbspsugar
  • 1 tspchili flakes
  • 1 tspfine sea salt
  • 1 tspsesame oil

Method

  1. Peel the 400 g daikon and cut it into evenly sized matchsticks, about 5 cm long and 0.5 cm thick. This ensures that the radish pieces will pickle uniformly and absorb flavors evenly.
  2. In a large mixing bowl, combine 2 tbsp rice vinegar, 1 tbsp sugar, 1 tsp fine sea salt, and 1 tsp chili flakes. Stir until the sugar and salt are fully dissolved, creating a balanced pickling liquid that will infuse the radish with a tangy, spicy flavor.
  3. Add the daikon matchsticks to the bowl with the pickling liquid. Toss them well to ensure each piece is coated. Let them sit for about 30 minutes, stirring occasionally. The daikon should begin to soften slightly and take on the color and aroma of the vinegar mixture.
  4. Heat 1 tsp sesame oil in a medium-sized pan over medium heat. Once the oil is shimmering, add the pickled daikon along with any remaining liquid from the bowl. Stir the radish in the oil, allowing it to cook gently and absorb the sesame aroma.
  5. Continue cooking the daikon until it becomes tender yet still retains a slight crunch, which should take about 5 to 7 minutes. The radish should appear translucent and glossy, with a pleasant balance of vinegar and sesame scent.
  6. Taste the daikon and adjust the seasoning with additional salt if needed. Serve the pickled radish warm, allowing the flavors to meld further as it cools slightly on the table, ready for sharing.
