Salchipapas

Serves 4 to 6 meat

Salchipapas

Originating from the bustling streets of Peru, Salchipapas is the quintessential street food that has found its way into the home kitchens of many families. Traditionally sold by street vendors, this dish is a staple for those seeking a quick yet satisfying bite, often enjoyed as a late-night snack or a casual meal shared among friends.

The charm of Salchipapas lies in its simplicity and indulgence. Crispy fries mingle with savory slices of sausage, all seasoned with a touch of fine sea salt, creating a delightful contrast of textures and flavors. A drizzle of ketchup and mayonnaise adds a creamy tang that completes the experience, inviting hands to reach across the table for more.

Ingredients

  • 200 gsliced sausages
  • 300 gfries
  • ketchup — to serve
  • mayonnaise — to serve
  • to tastefine sea salt

Method

  1. Begin by taking 200 g of sliced sausages and seasoning them with fine sea salt to taste. Ensure each slice is evenly coated by tossing them gently in a bowl. This step enhances the flavor of the sausages, making sure they are well-seasoned before cooking.
  2. Heat a large skillet over medium-high heat and add a generous amount of oil, enough to fully coat the bottom. Once the oil is shimmering, carefully add the seasoned sausages in a single layer. Allow them to brown, turning occasionally, until they develop a deep, rich color on all sides. This should take about 3-5 minutes, and the sausages should be crispy on the edges.
  3. While the sausages are browning, prepare 300 g of fries according to your preference, either by frying them in hot oil until golden brown or baking them in the oven. If frying, use the same skillet after removing the sausages, adding more oil if necessary. The fries should be crispy on the outside and soft on the inside.
  4. Once the sausages are browned, reduce the heat to medium and allow them to cook through for an additional 2-3 minutes. This ensures they are tender and fully cooked inside. If using a grill, place them on the grill and cook until they are heated through and have grill marks.
  5. Taste a piece of sausage for seasoning and adjust with more salt if needed. The sausages should be savory with a slight crispiness, complementing the fries.
  6. To serve, arrange the fries on a large platter or individual plates, and top with the browned sausages. Drizzle ketchup and mayonnaise over the top, or serve them on the side for dipping. This dish is best enjoyed immediately, while the sausages and fries are hot and crispy.
