Gaeng Som

Gaeng Som

Gaeng Som, a staple in southern Thai homes, is a dish that reflects the region's bold approach to flavor. Passed down through generations, this home-style recipe captures the essence of southern Thai cooking, where each ingredient is measured by intuition rather than precision. The dish is a celebration of local produce and the art of balancing flavors, often enjoyed during family gatherings or casual meals shared with friends.

The taste of Gaeng Som is a vibrant play of sour and savory, with a broth that delivers a tangy punch. The fish and vegetables absorb the curry's essence, creating a harmony of textures and flavors. It's a dish meant to be savored slowly, allowing each spoonful to reveal the depth of the gaeng som paste and the briny touch of fish sauce.

Ingredients

  • 1 Lsour curry broth
  • 300 gfish
  • 1 handfulvegetables
  • 2 tbspgaeng som paste
  • 2 tbspfish sauce
  • to tastefine sea salt

Method

  1. Begin by heating a medium-sized pot over medium heat. Add 2 tablespoons of gaeng som paste to the pot, stirring constantly with a wooden spoon to prevent it from sticking or burning. Cook the paste until it becomes fragrant and slightly darker in color, which should take a couple of minutes. This step builds the aromatic base essential for Gaeng Som.
  2. Pour in 1 liter of sour curry broth, stirring well to combine it with the paste. Increase the heat to medium-high and bring the mixture to a gentle boil. This step ensures that the flavors meld together, creating a cohesive base for the dish.
  3. Once the broth is boiling, add 300 grams of fish to the pot. Choose a firm white fish, such as snapper or cod, and cut it into large chunks. Allow the fish to cook in the broth for about 5 minutes, or until it turns opaque and flakes easily with a fork. This indicates that the fish is cooked through.
  4. Add a handful of vegetables to the pot. Common choices include water spinach, green beans, or cabbage. Stir them into the broth and let them cook until they are tender but still retain a slight crunch, which should take about 3 to 5 minutes. This ensures the vegetables are cooked but not mushy.
  5. Season the curry with 2 tablespoons of fish sauce, stirring it into the broth. Taste the curry and adjust the seasoning with fine sea salt as needed, keeping in mind that the dish should have a balance of sour, salty, and spicy flavors. This step is crucial for achieving the right taste profile.
  6. Finish the dish by turning off the heat and allowing it to rest for a minute. Serve the Gaeng Som hot, garnished with fresh herbs such as cilantro or Thai basil if desired, and a squeeze of lime juice for added brightness. This final touch enhances the overall flavor and presentation of the dish.
