Guay Tiew Tom Yum

Guay Tiew Tom Yum, often found in the bustling alleys of Thailand's street food scene, is a comforting bowl that brings together the rich, aromatic flavors of tom yum with the satisfying texture of rice noodles. This home-style version captures the essence of how Thai families enjoy it, with each household adjusting the salt and fat to their liking, making it a personal and cherished dish.

Expect a vibrant broth that sings with the bright notes of lemongrass and lime, perfectly balanced by the warmth of chili and the depth of shrimp. The rice noodles absorb the broth, creating a harmonious blend of textures, while bean sprouts add a fresh crunch. Each spoonful is a celebration of bold, zesty flavors.

Ingredients

  • 400 grice noodles
  • 1 Ltom yum broth
  • 150 gshrimp
  • 1 handfulbean sprouts
  • to tastefine sea salt

Method

  1. Start by preparing the rice noodles. Bring a large pot of water to a boil, then remove it from heat. Submerge 400 g rice noodles in the hot water and let them soak until they are tender but still slightly firm to the bite, about 5 to 7 minutes. Drain the noodles and set them aside.
  2. In a medium saucepan, pour in 1 L of tom yum broth and place it over medium heat. Allow the broth to come to a gentle simmer. You should notice a fragrant aroma wafting up as the broth heats, signaling that the flavors are melding together.
  3. Add 150 g shrimp to the simmering broth. Cook the shrimp until they turn pink and opaque, which should take about 2 to 3 minutes. This indicates they are cooked through but still juicy.
  4. Introduce a handful of bean sprouts into the pot. Stir them gently into the broth and allow them to cook for about 1 minute, just until they begin to soften but still retain a slight crunch.
  5. Taste the broth and adjust the seasoning with fine sea salt to your preference. The broth should have a balanced flavor with a hint of saltiness that complements the other ingredients.
  6. To serve, place a portion of the soaked rice noodles into each bowl. Ladle the hot tom yum broth with shrimp and bean sprouts over the noodles. Ensure each bowl receives an even distribution of ingredients for a complete and satisfying dish.
