Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by heating 2 tablespoons of oil in a large, heavy-bottomed pot over medium heat. Once the oil is shimmering, add 1 finely chopped onion. Stir occasionally, allowing the onion to soften and turn translucent, but not brown. This will take about 5-7 minutes and will form the fragrant base for your soup.
  2. Add 600 g of beef shank to the pot. Sear the beef on all sides until it develops a deep brown crust. This step is crucial as it enhances the flavor of the broth. Ensure each side is well-browned before moving to the next.
  3. Peel and slice 2 carrots into rounds and add them to the pot. Stir them in with the beef and onions, allowing them to cook for about 2-3 minutes. This will help release their natural sweetness and integrate their flavor into the base.
  4. Pour in 1.8 liters of beef broth. Stir to combine, scraping up any browned bits stuck to the bottom of the pot. These bits add depth to the soup's flavor. Bring the mixture to a gentle simmer.
  5. Reduce the heat to low, cover the pot, and let the soup simmer gently. Allow it to cook until the beef is tender and the carrots are soft, which should take about 1.5 to 2 hours. The beef should be easily shredded with a fork, indicating it is done.
  6. Once the beef is tender, taste the soup and season with fine sea salt and black pepper to your liking. The seasoning should enhance the natural flavors without overpowering them.
