Chaat Masala

Chaat Masala, a cornerstone of Pakistani street food, is a spice blend that has found its way into countless homes, capturing the essence of bustling market stalls. Traditionally crafted by street chaat vendors with an instinctive feel for balance, this home version stays true to those roots, allowing for a generous hand with salt and fat. It is a staple for sharing, inviting friends and family to gather around a table adorned with a medley of vibrant dishes.

The flavor of Chaat Masala is a bold interplay of tangy amchur, earthy roasted cumin, and the unmistakable punch of black salt. The hint of chili powder provides a gentle heat, while asafoetida adds a unique depth, creating an irresistible combination that elevates any dish it touches. Sprinkled over fresh fruit, crispy fried snacks, or cooling yogurt, Chaat Masala transforms the ordinary into a tantalizing experience.

Ingredients

  • 2 tbspamchur
  • 1 tbsproasted cumin
  • 1 tbspblack salt
  • 1 tspchili powder
  • 1 tspasafoetida
  • 1 tspfine sea salt

Method

  1. Begin by placing a dry skillet on low heat. Add 1 tbsp of roasted cumin to the skillet. Toast the cumin gently, stirring continuously with a wooden spoon, until you notice a warm, nutty aroma filling the kitchen. This should take a few minutes, but focus on the smell rather than time, as the fragrance is your cue that the cumin is perfectly toasted.
  2. Once the cumin is fragrant, remove the skillet from the heat and allow the cumin to cool completely. This cooling step is crucial because grinding warm spices can lead to clumping and uneven texture.
  3. Transfer the cooled cumin to a spice grinder or mortar and pestle. Grind the cumin until it becomes a fine powder. If using a mortar and pestle, apply steady pressure and a circular motion to achieve a consistent texture.
  4. In a mixing bowl, combine the freshly ground cumin with 2 tbsp of amchur, 1 tbsp of black salt, 1 tsp of chili powder, 1 tsp of asafoetida, and 1 tsp of fine sea salt. Use a whisk or a spoon to mix these ingredients thoroughly, ensuring that the spices are evenly distributed throughout the mixture.
  5. Once the chaat masala is well-mixed, transfer it to an airtight container. Store the container in a cool, dark place, such as a pantry or cupboard, to preserve the freshness and potency of the spices.
